I made this (http://www.recipecommunity.com.au/recipes/pumpkin-bread/42450) pumpkin bread today and it is really lovely. The flavour would be enhanced if the pumpkin was roasted beforehand, but it was still very nice using the raw pumpkin and sooooo easy. The only change I made was to use spelt grain (milled for 1 minute) instead of the buckwheat. I will definitely be making this one again.

made a mental note to try this recipe when I saw it being flung around FB today (or was it yesterday ???) Will definitely give it a try now and mine will be with spelt too :)
