This is just a silly chat but have just made some more beautiful lemon butter, very tart this time as my lemons are super juicy. So....how much is the juice of one lemon.

I have lots of lemons, properly 1/2 -1/3 cup.

I reckon it is the same as the amount of juice of one lime. ;D ;D

I knew it was a dumb question but the point being i am getting more like 3/4 cup from my lemons at present ( also if they are left to sit a few days) and it doesnt really matter with lemon butter but my hollandaise sauce with 1/2 a lemin juiced was much too lemony which made me wonder what the recipe really required.

I am squeezing lemons every nite at the moment.
You also get more if you microwave them for a couple of seconds.

Now that is a very good question. My hollindaise split last time for that very reason. Too much juice. So a recipe should say how many gms or how many teaspoons.
And when you think about it the same goes for egg yolks.

Googling I came up with 45 mls but if you have large lemons it would be more than that. I only use 1/2 a lemon if they are big and juicy.

i have been making lots and lots of the hollindaise from the EDC and i use 2tbl of juice.
in the lemon butter/curd i i make i use 80g of juice
