Title: Meyer Lemon Tarts
Post by: achookwoman on June 05, 2012, 07:25:08 am
Meyer Lemon Tarts
This is a very basic recipe .  All you need are Lemons, eggs ,sugar and puff pastry.
Meyer Lemons are very suited to this recipe as they are mild in taste and have thin skins.
4 Meyer lemons , 1/4 and pips removed
250g of sugar
4 + 1 eggs
About 4/5 sheets of Puff Pastry.  (number depends on what you make.)

Start the day before
Put lemons in TMX and press Turbo Button until they are chopped , but not pulped,(I pressed 3 times)
Add sugar and stir on reverse for 5 seconds.
Pour into a plastic container and store over night in fridge.
Next day
Beat eggs in TMX for 10 seconds/speed 4
Add lemon/sugar mixture, mix for 5 seconds
Line tart dishes or muffin cases with puff pastry, spoon in mixture to 3/4 fill.
Either leave uncovered or cover with pastry tops, brush with egg wash, and bake in hot preheated oven (200 o C)
Stand 5/7 minutes and remove while still warm to wire rack to cool.

Can be frozen and reheated,  or cooled and reheated.

Amy - These worked a treat with mandarins. When I made the mixture yesterday, I reduced the sugar to 150g and used 5 smallish madarins. Today, I made 12 open tarts and brushed the edges of the pastry with a mixture of egg, vanilla and nutmeg. I cooked them for ten minutes with the fan on, and then turned it off for the last 5. I had some mixture leftover so I added 300ml milk and 50g cornflour and cooked it for 7 minutes/90 degrees/reverse + speed 4 to make mandarin custard. Thanks for a great recipe Chookie.

Hi Chookie, do you think this would work as one large tart? If so, how long would you cook it for? :)

Amy, it would work as large tart.  Probably 20/30 mins. Baking.  Just make sure the pastry is cooked on the base and the lemon filling is set.

What is a Meyer lemon?

I only  have normal lemons?

DJ,  these are lemons that seem to grow better in cold climates,  that is where we live.  I think they are half lemon and half orange,  but not completely sure.  As you use the whole lemon in this recipe,  if you have 'normal' lemons you might be wise to substitute some orange or even mandarin for some of the lemon.

Amy, after you have called in at Robyn's you can duck down to my place for some more I have a Meyer lemon tree and it is loaded.  The great thing about Meyer lemons is they have fruit all year round, I am never with out lemons.

Are they easy to grow? Is it a hassle to maintain it pest free?

Courton,  I have had this tree for about 20 years, I do nothing to it, twice it has had a bit of scale and I just sprayed it with white oil, I feed it with citrus food once a year,  It is a small tree about 6 ft high and 10 ft wide.  The fruit is just lovely and so much of it, all my friend and family collect their lemons when they visit.

I am sooo tempted...but I am afraid the possums will enjoy the fruit before I do!

I have possums here, last year I found some with the skin eaten off them, I think the little rascals ate most of my oranges.  if you can protect the tree while it is young you should be ok.  I don't mind sharing a bit of fruit but I get mad when they eat the lot.  I have the most trouble when the stone fruit is ready I have to cover everything, the birds have a field day.

It turned out really well :D
