Double Choc Muffins
A healthy recipe, for Mandi, with love :-*
Wet Ingredients:
210ml skim milk
150g low-fat vanilla yoghurt
25g reduced-fat table spread (such as Nuttelex)
1 egg
Dry Ingredients:
65g caster sugar
20g cocoa
150g wholemeal SR flour
150g normal SR flour
60g chocolate chips
Preparation:
1. Preheat oven to 180 degrees and grease some muffin pans.
2. Mix wet ingredients for 30 seconds/speed 4.
3. Add dry ingredients, incorporate briefly with spatula, and then mix for 20 seconds/reverse + speed 3 or until just combined.
4. Spoon into muffin pans and bake for 15 minutes or until cooked through.
Notes:
The muffins and muffin mixture may look a little lumpy because of the wholemeal flour. This is completely normal.
My mixture made 16 muffins.
I have also made these using half milk and half white chocolate chips.

deedub - they're yum, so moist! I didn't have w/meal SR flour so used all white. Next time I might use a few more choc chips to please the kids (not for me, you understand). Thanks Amy, was worth blowing the budget on the vanilla yoghurt.
dede - DS 5 gave the muffins a thumbs up and said they were very fantabulous. I just tried one myself and yum, very light and tasty.
Definitely will be making again. 5/5
Amy - Lovely ladies Mandi and Tan have done some calculations for us:
Mandi has worked out that each muffins is approximately 125 calories.
Tan worked out that if you make 16 muffins, each muffin is worth 3 points according to the Weight Watchers point system.

I made another batch of these today because the ones I baked yesterday have all disappeared!
I used half milk and half white chocolate chips this time ;)

I have put these on my to do list Amy. I'm sure the kids will love them too. And maybe I can have one (or two, or three :D )

They look nice Amy - not too big either so a nice portion size.

I normally take a cupcake to work each day for morning tea, and I think these should be that muffin. Much healthier. I'll make these. When my oven gets fixed. I'm hoping it gets replaced.

Had to go and buy some vanilla yogurt as the kids have eaten all the yogurt in the house (4 litres in 6 days :o )
And then I had some yogurt and a banana for lunch. Yum

For anyone interested I worked these out to be around 125 calories each.

Well I've eaten 250 calories worth then . Is that bad?

Aunt Betty's choc chip muffins are around 420 calories each :o

i have worked this recipe out for anyone following weight watchers.
If you get 16 - they are 3 propoints each, which is pretty good!!!

Mandi, how did you go about working out the calories? Was it difficult? I would like to do the same for some of my recipes if its not too hard. I failed maths at school because I'm not very good at number stuff :(
If you wanted less calories you could leave out the chocolate chips... but where's the fun in that? ;D

I use a calorie counter app on my iPhone, I just went through the ingredients list and found out the calories of each ingredient, added them all up then divided by 16 (the amount of muffins I made)
There is probable an app that is easier to work out but I haven't found one yet.

Amy this app myfitnesspal (http://www.myfitnesspal.com/) is available for any smartphone. It is also available on a website. You can track calories consumed and burned. It will let you add recipes and works out all the nutritional information from the ingredients.

Calorie King Australia (http://www.calorieking.com.au/) is also pretty good for getting nutritional information for food. They have almost all foods in their database. To work out the calories per serve for a recipe you'd need to work out the total calories for each ingredient, add them all together, and then divide that total by the number of serves.

Sounds like a lot of numbers would be involved in that calculation Amanda.... numbers are not my forte :-))

it's not too hard to work out Amy. Here's a rough calculation for you.
210 Mls skim milk = 80 calories
150g low fat yogurt = 148 calories
25g reduced fat Marg = 72 calories
1 egg = 70 calories
65g caster sugar 264 calories
20g cocoa 80 calories
150g wholemeal SR flour 480 calories
150g normal SR flour 500 calories
60g chocolate chips 300 calories
Total 1994 calories divided by 16 = 124 calories per muffin
