After my heavy lemon muffins made in *:
I went back to basics and made a really light lemon drizzle at the weekend.
It is based on this recipe by Mary Berry. http://uktv.co.uk/food/recipe/aid/534232
I used butter, and more milk.
In uk a tablespoon is 15 mls, but I used more milk anyway. More like 80-90 mls. I did not measure the last bit just chucked it in.
I suggeste you use 4 Aussie T's and see how you get on.
I used a mix of methods, and I used KEN the Kenwood Chef!
Anyone clever can convert this for *: but I think this makes a lighter version.
First beat the butter and sugar until almost white. Scrape down a few times and repeat

Then add in rest of ingredients

Beat for 2 mins. Stop and scrape down after one min.

Put in lined trays, load tins or muffin cases, whichever you prefer.

Bake until done. 180 ish degrees. I use Aga which is not like an ordinary oven.
These 3 took 35 mins.
You will know your own oven will be ok from approx 170 a 185 depending if fan or not.

DD took to work and one man wanted to buy it, as he said best cake ever.
Think it very important to really beat butter first if using butter.
