Title: Custard Tarts

The recipe on RoboGourmet says to use the short crust pastry from EDC and blind bake.
If I used the cream cheese pastry would I still need to blind bake? Have never blind baked before.

I would say so otherwise the pastry would be soggy and you definately need a crunchy shell for custard tarts.

I think you should blind bake the pastry, or your tarts will be soggy.
All you need to do is roll out the pastry into the dish, and then rest it in the fridge for 20 min. Pull off a sheet if foil or baking paper that is larger than your dish,  and put it on top of the pastry. Pour some rice or dried beans on top of the foil or paper. Bake for 15 minutes at 200C,  then remove the foil / baking paper and the rice/ beans and then cook for another 5 min, until golden.
Then pour in custard and bake as per the recipe.

Just made one.
Made pastry, blind baked, cooled.
Add my custard mixture which I just threw in TM.

3 egg yolks
2 tbs sugar
1 tsp vanilla essence

Speed 4 couple of seconds, then
3/4 cup thickened cream, speed 4 to combine.
Pour into pastry shell, then springle with nutmeg,  cooked 180 20 mins, perfect

Sure does Halex. The custard tart will be for tomorrow. Tonight we are having butterscotch pudding for dessert.

I love custard tart with lots of nutmeg on the top. I haven't made one for ages though.
