Title: Raspberry Frangipane tart

Hi

I just had a work lunch and we had the most wonderful raspberry frangipane tart. It was so yum.  I came and looked on the forum but can only find bakewell tart, not quite what i am looking for.

I have however found a recipe on the internet that I am wondering if any of you experienced TMXers would be able to convert?? Here is the link below if anyone has the time, I would really appreciate it.

There is also a frangipane florentine slice in the 2010 calendar.

GHM you could use the method for the plum one and the ingredients for your raspberry one. It should be quite easy to do.

If you do not feel like making the pastry cases,  I have discovered a fabulous NZ brand LINCOLN which makes sweet and savoury pastry cases like the little tartlets you buy in coffee shops. Around $6 for 12 cases and sold in a few speciality shops. Really worth pursuing and stocking up...the best cases when you don't feel like making the cases.

I haven't tried to convert it for TMX but I've many many times and get asked for the recipe often. 

Just use all raspberries rather than mixed berries.  I use frozen not fresh and just thaw for a few hours and drain them in a strainer over a bowl.

Hi Chrissa that recipe from Masterchef does look wonderful and I think it would work well substituted with all berries. Thanks for sharing

Chrissa, I would like to make this but how essential is dark rum. Have only ordinary rum...will this do?

The latest copy of Australian Good Food has a recipe for a Blueberry Frangipane Tart in it. It actually has a lot of recipes in it this month that I want to try.

Sorry Courton, I didn't see your post. 

I'd use white rum if I didn't have the dark one.   I don't think it would make too much difference.

 I used frangelico once just to see what it would be like and it was just as delicious

Well today I made the frangipane tart similar to this one

I used mixed berries and I spread the melted rasp jam on the base of the pastry before the frangipane which gave it a nice taste. Loved this pastry with oats in!! woul love the make again and try out other fruit.

Bumping this.  Do yourselves a favour and try this.  I had plums to use up and followed recipe.  Only change I made was using Orange Marmalade jam on topping instead of apricot.  Very easy and delicious.  I will post pic soon.
