I baked this recipe today and it is excellent. It's full of wholemeal goodness and beautifully moist. It's definitely going to become a favourite in our household. Next time I'm going to bake three loaves at the same time to save energy. The great thing is that the loaf is so adaptable. You can use hazelnuts, pumpkin seeds, poppy seeds, buckwheat, ground almonds or pine kernels, for example, instead of the linseed, sunflower seeds and almond slivers.
--------------------------------------------------------------------------------
Ingredients:
500g spelt grains or wheat grains
1 packet of fresh yeast (I used two packets dried yeast)
1.5 tsp salt
1 tbsp sugar beet molasses or sugar
75 g rolled oats
50 g almond slivers
50 g linseed
50 g sunflower seeds
500 g lukewarm water
2 tbsp apple vinegar
Preparation:
Grind spelt grains 1 min /speed 10.
Add yeast and mix 5 secs / speed 5.
Add all other ingredients and mix 2.5 mins / ::
Grease a loaf pan and pour in the very liquid spelt dough. Place in lower third of COLD oven and bake 70 mins at 170C.

Sounds great - warning for newcomers - make sure th yeast is well mixed before adding the vinegar - would pay to add it very much last as in the list of ingredients to prevent it killing the yeast.

I'm curious as to why it has vinegar in it at all. ???

You really do learn something new each day...Both you Brazen and Thermomixer are such a wealth of knowledge! I love it

This bread is yummy. Made it a couple of days ago and is moist and quiet dense and has lasted a few days really well. I used almond meal instead of slivers.
Will be making this again!

This sounds yummy, you could make it with LSA. My kids might eat it better that way LOL

Hi, I am new to posting in the forum but I have been thermomixing for a few months now. I have made this bread over 10 times, I do things differently each time but it always turns out amazing. The last few times I added a sliced onion and some fresh chopped herbs - right at the end of the mix cycle. Delicious. Thanks so much for posting this super quick recipe - it has changed our lives.

Hi Aggie, glad you have started posting - it's fun to join in with our conversations. Why not pop over to Introduce Yourself (http://www.forumthermomix.com/index.php?board=33.0) and give everyone the chance to say hello and tell us what else you have been doing in the TMX.

Thanks Aggie - I really want to keep practising different breads when I can. I have wholegrain spelt now :) The ultimate would be not to buy bread, I'm not there yet.
