This looks delicious . .and practical for a do ahead picnic (or any other time) cake . . .looks as though it would be fairly easy to adapt to the TMX

My DD made this today but used frozen raspberries instead of blackberries.  Everything was done in the tmx including the jam (following Tenina's Va Voom Vanilla and  Strawberry jam as a guide and. cooking on 100 and then varoma for the last 5 minutes. Out of lemons so she used limes -they worked really well :)

A lovely cake.. Great for picnics etc!

It looks very much like a raspberry coconut loaf I make. Anything with coconut is a winner :)
