Here is budget version of everyone's favourite. No nuts/raisins or frills.
The house moving version when half the larder is still packed!
Made in a jug with hand mixer.
Equally can be made in Thermy when unpacked!

100g softened butter
120 gms sugar ( half soft light brown/half golden castor)
Cream together above until well beaten.
Add in 2 eggs and 4 T of SR flour ( 225 gms total SR flour) just mix in enough to incorporate eggs.
Add rest flour and 2 large over ripe mushed up bananas.
Beat in til thoroughly mixed.
Lined loaf tin.
175c fan oven approx 45 mins.
Depends on oven.
Enjoy.

A real hit with the men, even the one that doesn't eat bananas!

CC - DJ very kindly gave me one of her cakes yesterday. It's delicious and very moist. On the first bite you can immediately taste the banana but then the subtle flavour of the orange comes through. It might be a budget cake but it certainly has a first class flavour. DH loved it too.
