Just a quick review, but what a simple, quick recipe that looks impressive, and is sure to be well received.

Haha, yes cooking up a storm here. Such perfect time to get both my thermomix and this book, with DD's birthday last week, and the work xmas party this week.
Will post after the party with how all the nibbles went down!

Just about to whip this up :)
I have no eschallots, I have red onion, spring onion, salad onion & normal onion.
I was thinking red woukd be the way to go, what are your thoughts?

I think a red onion would be ok Hally but you might only need a part of one, some of mine are huge so might overwhelm with onion flavor.

All made, very interesting, never made pate before :) was surprised how runny it was.

Tenina I'm having trouble finding smoked chicken - have tried C*les and WW. Would a butcher have it? Am I looking for something that has been vac packed or its sold by the kg?

Cream Puff, i bought mine in IGA at Canning bridge, it was vacum packed.

My Dad smokes chicken breasts for (fabulous flavour), but if I don't have any, I buy them from Aldi....I actually prefer the Aldi ones compared the supermarkets...and they're cheaper too.

Smoked chicken breasts available at Woolies near us. Not Vac sealed, $22 a kilo. In Deli section.

It is really really good, we have eaten 1/2 a ramekin in one setting with other nibbles.

Please can someone explain why we pour melted butter on the top? We just scraped it off.

I think it's just to seal it and make it last until you are ready to serve/eat.

Just whipped this up, very quick and easy, hope it doesn't take long to set, need it in 3hours time.

Well I orderd a 1.4kg turkey breast from aussie farmers. Just went to unwrap it for dinner tonight & its smoked turkey breast ??? :o. BONUS, it cost me $30 for 1.4kgs, whereas i paid $15 for 500g of smoked chicken. So will be using a kg to make pate.
Lucky we have some left over turkey breast slices in the freezer, so am defrosting them right now :)
The turkey is good until mid jan, so no rush to make today.

I did this the other day with smoked turkey as well. I have so much leftover. Any idea on what to do with the leftovers?

You can use left over turkey in everything, pies, curries, ceasar salad, pasta, tacos, fried rice, freeze for another day. The list is endless.
I will be using most of my turkey to make this pate as we just love it.
Enjoy your turkey, its my favourite meat :)

This wasn't a hit here unfortunately, only about 1% got eaten. Unfortunately it will go in the bin today. Lucky I had all the ingredients in the fridge /freezer so it didn't really cost me much n time or ingredients.

Making more of this today with the rest of my smoked turkey breast. We love it & it freezes well :)

It got demolished at my birthday party last week too - even my baby niece loved it :D
Good to know it freezes well Hally - might have to do that next time. I filled 2 ramekins but would have been quite happy to just have one for most occasions.

About to finally make this.. For those near a Cosco they have it vac packed in the fridge section near cheeses etc... Bought it with this recipe in mind..

Made this yesterday and served it today. Absolutely loved it. I put it into three medium ramekins. I have frozen one. Definitely worth making. Great flavour.
