Title: Clever way to separate eggwhite from yolk
Post by: SuperMum_of_3 on December 01, 2012, 10:43:45 am
There's an easy way to separate egg white & yolk for whipping the whites only.

With the MC in, crack the egg on top of the TM lid and the whites will slide into the bowl, leaving the yolks on top.
Crack as many eggs as you need then remove the lid, hold over a jar or container, take out the MC & the yolks slip into the container which you can pop in the fridge for later use.

If it's the yolk you need in the TM bowl, not the whites, use the same method but put the lid over the storage container first, then over the TM bowl.

Yeah, I didn't realise I was sitting on an unknown trick until I hosted a party a month ago & the Demonstrator was cracking eggs the way I used to BT (before Thermomix). When I asked her why she didn't use the MC/lid, she gave me a blank look.
So I showed her & she got excited.
Pretty much, if there's a way to streamline something, I'll find it. lol.
I'm lazy when it comes to washing dishes... can be a good motivator for efficiency.  ;)

This sounds good. Is it easy to have an accident and break the yolk?

good point cookie. YES, in theory that could happen & would be TERRIBLE!

Though it hasn't happened to me & doubt it will - we have our own chooks so our eggs are fresh, yolks are perfect & stay in tact.
But yes, if the eggs were old it could happen as the quality of the yolk deteriorates with age, especially if not kept in fridge. A fresh egg keeps a firm yolk. But then aged whites don't form peaks well either so you'd be separating the whites from a fresh egg anyhow.

Uh, I dunno. Perhaps try it first over a container. I don't want to mess up anyone's baking!

Yeay TL! Thanks for the feedback!
I have my own chooks=freshly laid eggs. Since cookies post ive been a little worried about whether the integrity of the yolks of store bought eggs would be up to the task. Have been hoping my tip wouldnt spell disaster for someones baking!
Your post has put me at ease to know it works for others too! Yeay!!  ;D

The word must have spread quickly because when I had my demo just over 3 weeks ago it was one of the tricks mentioned.  Brilliant idea!

I used to mention this at demos when I was consulting  ;) ;) for the record I have never had a yolk break on me yet so touching wood as I speak and hoping I haven't jinxed myself!  :)

faffa - I guess we're both clever chick's then! ;-)

What is it they say about good ideas? Something like, "for every good idea you have, there are hundreds around the world who've had the exact same idea".

JMC - great to hear this handy hint is getting shared - I think it's ability to separate eggs is just another surprise bonus that makes the TM31 design simply awesome!

I wonder if they knew that when it was designed.
