Sweet Potato, Feta and Basil Quiche
Pastry Ingredients
75g plain flour
75g self raising flour
20g butter, melted
120g cream
Filling Ingredients
250g sweet potato, peeled and thinly sliced
1 tablespoon olive oil
150g feta cheese, crumbled
2 tablespoons basil leaves, shredded
1 garlic clove, peeled
2 eggs
1/2 cup cream
1/4 cup milk
Preparation:
Preheat oven 180°C.
Lay sweet potato on baking tray, drizzle with oil and bake 10 minutes until just tender. Cool slightly.
Grease 23cm nonstick quiche tin with removable base.
Place all pastry ingredients in tmx bowl and knead until combined.
Tip out onto silmat and roll out and line tin with pastry.
Place sweet potato on pastry, sprinkle with feta and basil.
Place garlic in tmx and chop 5 seconds, speed 5.
Add eggs, cream, milk and season with salt and pepper to taste. Mix 10 to 15 seconds, speed 4.
Pour into quiche tin and bake 35 minutes until set.

I made this today, so easy. The pastry is lovely to work with and didn't shrink.
I used Goat Feta cheese (South Cape) which was perfect in this. The packet was only 120g but I will use the same again next time as it was so nice. The garlic and basil flavour came through without overpowering. I used baby basil leaves from my garden which smelled wonderful while the quiche was cooking.
I had a small slice just to taste it and ended up having another piece as it was that nice. Will be serving with salad to DH when he gets home. Really loved it. Thanks Kimmy. :D

We had this tonight. I found the pastry interesting. I actually left it to rest in the fridge for a bit as I wasn't ready to use it. We liked it very much and it didn't need blind baking. The taste of the quiche is lovely. I used pumpkin instead of sweet potato and sprinkled it with black pepper liberally before I roasted it.
Will definitely be making this again.

I made a variation of this last night, no basil , I did blind bake the shell. It didn't last long very yummy.

I made this today and added in some left over Christmas ham. I was a bit concerned with making the pastry as I am still a novice but it turned out wonderfully! Will definitely make again

I made this last night...cooking mojo was well out the window as I didn't have sweet potato, so used pumpkin like Cookie did. Also found some bacon in the fridge and threw that in as well. Didn't have all the cream needed either, so used milk in the filling.
Miss 12 wanted leftovers for her lunch today. She is going to be mighty disappointed...there are none.
It was easy to make and it was Yum and I'll make it again - thank you Kimmyh :)

Yum Kimmy! I have the feta, pumpkin and caramelised tart planned for dinner tomorrow. However will add this to my meal plan for next week.

Your base is the best Kimmy. I used it instead of the edc short crust. It now replaces it in my book. I made a caramelised onion, pumpkin and feta tart. It was delicious and will definitely be a part of Christmas lunch :) (http://img.tapatalk.com/d/13/11/18/4ura7yge.jpg)

Your tart looks awesome. Yes the base is super easy but I can't take credit, mum gave me the recipe and I use it for all quiche/tart recipes now.

I made this yesterday using pumpkin instead of sweet potato, and it was really easy.
I will certainly make the pastry again, it was so quick and easy to work with, and didn't shrink at all.
I will also use it next time I make a sweet pastry, perhaps just zap 20g sugar into icing sugar and then add the rest of the ingredients as per the recipe.

Made this in a large quiche dish, 4 x the ingredients listed here, made a lovely deep quiche that went down well i added spinach and parmesan also

This is a lovely quiche. My DH and DS don't like sweet potato or pumpkin so I didn't use it. Instead I added ham and caramelised onion. The pastry was nice and crisp too
I managed to keep a small slice for lunch today, and I think that it was even nicer cold

I've been meaning to post here for a while to say how wonderful this pastry is in my electric pie maker as the bottom of the pies. The recipe makes just enough for the 4 pies, and I use puff pastry for the lids.
The other day, I didn't have any cream, so I substituted sour cream and it worked wonderfully. The kids demanded pies again the next day, and I didn't have enough sour cream left, so I used half sour cream and half Greek yogurt, and the pastry still turned out well.
