Title: Mrs Beetons Spiced Beef

This recipe was given to me by one of my upholstery friends, Sarah,who says " This is seriously good and so easy.Enjoy"  With Christmas approaching and Australia experiencing very hot weather I thought you guys might like it.Please remember if you are going to serve it for Christmas you need to start the process 7-8 days ahead.

Mrs Beeton's Spiced Beef
25g soft brown sugar
10g Maldon sea salt
2 bay leaves
Half tsp allspice berries - lightly crushed
Half tsp black peppercorns- lightly crushed
Half tsp juniper berries-lightly crushed
2 whole cloves- lightly crushed
500g silverside
Half tbsp sunflower oil

Mix sugar, salt, bay and spices. Rub all over beef, cover with cling film and refrigerate for 5 days turning over once a day. Remove from fridge and bring to room temp. Rinse off spices and dry. Heat oil in frying pan and brown. Place in roasting tin and roast 30 mins at 160C/Gas 3. Leave to cool. Wrap tightly in cling film. Leave to chill for 2-3 days. Serve sliced as thinly as possible.

i will try this CC but not for Xmas day just incase something goes wrong   :-))

allspice berries and  juniper berries, i have never heard of b4 will try and get some this week

Juniper Berries are used to flavour gin ;)

Will be definitely trying this, it sounds wonderful.
Uni, let me know if you can't find the allspice /juniper berries we get them here at the IGA store. I don't know about the other supermarkets though.

Mrs Beeton (http://www.mrsbeeton.com/), a very well knows name even here in Australia CC.  I wonder how many members have her famous book mentioned in that article.

Is the silverside in this recipe actually corned silverside?  I have never roasted corned silverside but it does sound very flavoursome.

Judy,  I think it would be raw,  unpicked silverside.  This is very much a pickling recipe with less salt.  It is very similar to the special pickle my dad used in his butcher shop.  The silverside is often sold in the Supermarket with the roast beef.  I don't buy it for roasting as we find it too dry.  However it is popular as it has very little fat through the meat.  It would be perfect for this recipe.

I've got her book JD, very useful when royal visitors drop in, has a section on how to address royalty, where to place them at table etc!

It's a very small piece of beef.
My silverside joints in the freezer are much bigger.
Good well hung silverside of beef can be roasted, and cheaper less hung versions are usually pot roasted.

I like the sound of this one, but will have to cook longer.
I think it is a sort of corned beef variation but without the salt petre or current equivalent.

Hmmm difficult decision :-\  I would probably cut it half.Double the spice mixture to marinade the two pieces of beef.Then cook the beef pieces for 27 minutes.What do you think of that?

Browned the beef as per recipe then cooked the beef in the oven for 36 mins as it weighed 600g.Now letting it cool then I'll wrap it ;D

Loved this, I ended up cutting into two pieces and doing one.  Wished now I had done both pieces and will definitely make again.  Thanks CC for sharing the recipe.

I just bought a piece of silverside beef.Raw, nothing added or prepared in anyway. ;D

A bolar  blade roast would work.
