Title: Bad yeast

Help!

I have had great success making pizza dough up until last week. My last two batches didn't rise properly (gave me the worst tummy ache) and now this is taking forever... Could it be the yeast? I use premium instant yeast (bought at woolies) and I kept it in the fridge. Has it gone bad? Should I toss it? What yeast do you use for bread and pizza dough?

Here's (http://www.forumthermomix.com/index.php?topic=6488.0;topicseen) a test to see if your dough is fresh TL.  Is the use by date still OK?  I use dried yeast for all bread making, I keep the container in the freezer and never have a problem.

i keep a few tablespoons with my dough making container and the rest in the freezer

Aha!!! Thank you so much. Will investigate. Yesterday I made pizza dough again and it seems to be fine. Crazy that yeast could be so temperamental!

yeast can go off in the heat too.

I didn't know yeast could go off either! Glad I checked this coz I have yeast that is over 4 years old sitting on the shelf! haha.

You can check it before you use it. Warm some water to 37 degrees, add a pinch of sugar and a teaspoon of yeast. Stir on  ^^ for 10 seconds and then leave for 10 minutes or so. If your yeast is ok you will have bubbles on the top.
