Spicy Vegetable Muffins


INGREDIENTS

280gms self raising flour
3 tsp curry powder
salt and ground black pepper to taste
200gms of mixed vegetables (I used zucchini, carrot and pumpkin)
125gms of cheddar cheese
90gms of butter melted (I do this in the microwave)
1 egg lightly beaten
185mls milk

METHOD

* Pre heat oven to 180
* Place flour, curry powder, salt and pepper in  *: and sift sp6 for 5 secs - set aside
* Place cheese in  *: and grate sp7 for 10 secs - set aside with flour
* Place vegetables in  *: and grate sp7 for 8-10 secs
* Add flour and cheese back into vegetable mix and combine  :-: sp4 for 10 secs
* Add the melted butter, milk and egg and mix until just combined  :-: sp4 for 10-12 secs
* Spoon mixture into prepared muffin tin - bake for 20 -25 mins

They look yummy Michele.

I prefer savoury muffins to sweet ones so will give these a try soon  :)

I have set myself a goal to post a new recipe every week this year. I have had my TMX for just over a year and have posted very few recipes. It will help me utilize my cookbooks more too.   :D

I made these for lunch today and they're really tasty!!! :D :D Thanks for the recipe Mich :-*

I used carrot, zucchini and capsicum in mine, and only 1 tsp curry powder because I'm a wimp :-)) ;D

Has anyone else made them? :)

I made these today, using broccoli and sweet potato and parsley. I added paprika instead of curry powder. Mr 2 is still asking for more...

This is a very forgiving recipe. I had spooned the mixture into the pan when I realised I'd used plain flour not SR (I had a different brand to usual and the colours confused me!) so I put it all back in the thermomix, added (too much) baking powder, scooped some out, mixed again, then let it sit while I attended to a hungry newborn and a toddler on the toilet...I then crossed my fingers and baked them and they turned out fine. Phew!
