Paleo Pumpkin Bread
Ingredients
450g Pumpkin
4 Organic or Free Range Eggs
1/2 teaspoon sea salt
1.5 teaspoons spice (I used pumpin pie spice blend but mixed spice would work)
60ml EVOO, macadamia nut or similar oil. I used grapeseed oil becuase I had an oversupply
2 teaspoons Baking powder (use GF baking powder if you have glutten issues)
300g almond meal
1tbls honey
Roasted pumpkin seeds to sprinkle on top
Method
Preheat oven to 160 fan forced or 180 if not using fan forced oven
Mill almonds to almond meal if needed and set aside
Peel pumpkin and cut into chunks. Place in *: and grate on speed 5 for about 10 seconds scrape down and grate further 5 seconds if needed.
Add eggs, salt, honey and oil then mix for 10 seconds speed 4.
Add almond meal, spice and baking powder to *: and mix for 10 seconds speed 4 or until combined.
Pour into a lined loaf tin (I used a greased silicon loaf pan) and sprinkle with roasted pumpkin seeds. Bake for 1.5 hours. Check after 1 hour.
Tips
I checked it with a skewer after an hour and it was not even close. After 1.5 hours the skewer came out clean and it seemed ok but when I cut it the next day it seemed a bit wet inside. The out side was well cooked. I think this would work well as muffins.
If you are not worried about it being Paleo or GF you may try substituting half the almond meal with wholemeal flour.

Amy - I made this today. It's really yummy. It would be lovely with a drizzle of warm honey but I think that would defeat the purpose of healthiness!! I don't have a big loaf tin so I made two smaller loaves. One half of a loaf is already gone, oopsies. Oh, and I just used 300g SR flour and left out the baking powder.

Would you have this with coffee or a meal or something else?

It is kind of like banana bread. I would use it in place of banana bread.

I found that mine didn't cook as well in the middle as I thought. I cooked it for 1.5 hrs at 150 fan forced and the skewer seemed to come out clean but when I cut it the next day it was under cooked in the middle.
I think I will try it again substituting half the almond meal for wholemeal flour and molasses for the honey. I will probably also make it as muffins or using 2 small loaf pans to ensure it cooks in the middle.

I am beginning to think my loaf was not under cooked but this bread does not like being stored in a plastic bag. It seemed to get wetter and wetter every time I went to get a piece. Even the ends which should have been well cooked were too moist.

DD I might wait until you perfect this, I made a sprout loaf yesterday it is really heavy don't know if I will do it again.

What do you mean by a spout loaf AB? I like heavy bread.

Den, I think this would work better with half wholemeal flour. I will try it soon and see. I think it might be too moist because of the moisture in the almonds :)

You could be right Amy. I converted from the Healthy Chef website and tried to keep it close to as it was for VieveMS and others who are interested in a Paleo diet.
When I first took it off the cooling rack it felt ok. Then I put it in a plastic bag in my bread tin overnight and when I got it out in the morning it split into two pieces as soon as I picked it up. Every time I got it out to get another piece it seemed to be getting less and less cooked. That is why I am thinking that it didn't react well to being stored in plastic.

DD meant to put sprouted loaf, sprouted wheat loaf , I couldn't get the sprouted wheat fine enough I should have dried it out before I tried to grind it up I might try again as I like the taste of it, it is a sweet bread I reduced the honey next time will put in less again. Sorry I don't know how to link things, I was looking at eating for your blood group and came across it.

Thanks for giving this a go Amy. I am happy that you like it. My only complaint was that it seemed to absorb moisture in the plastic bag I put it in. So each day it seemed to get less and less cooked in the middle. I think the self raising flour would fix this problem.
