Name of Recipe:Brussels sprouts, bacon and apples
COST inexpensive
PREP TIME 10 minutes
START TO FINISH 35 minutes
Number of People:4
Ingredients:
1lb/455g Brussels sprouts
1 ½ tbsp unsalted butter
5 thick bacon slices (about 4oz/115g) cut into ½ in pieces
2 Golden delicious apple peeled, cored and cut into ½ in cubes
Kosher salt
Parsley optional
Preparation:
Cut off and discard bases from the Brussels sprouts, cut in halves
Boil sprouts in a large pot and add 2 tsp of salt, until tender but not mushy
Drain the sprouts in a colander, then place under cold water to completely cool
Pat them dry and set aside
Or cover and refrigerate, removing 1 hour b4 using
Saute the bacon with butter in a larger heavy frying pan over med heat until browned and crisp
Remove with a slotted spoon and drain on paper towel
Add more butter to pan if needed, when hot add the apples turning often, until softened and just lightly browned, about 5 min. add sprouts and bacon stir and cook until all ingredients are heated through about 2 min
Season with salt , and sprinkle with parsley. Serve hot

We all loved this today thanks Uni - a great way to serve this mostly unloved vegie. I prepared the sprouts, cooked the bacon and apple early on then just reheated everything in the pan with some butter just before serving and placed it in the oven to keep warm.

Don't know how I missed this recipe. We love brussel sprouts. The bean version sounds good too though.
