Title: C4 Biscuits - Choc Chip, Coconut and Cranberry.

I call these C4 Biscuits  - standing for Choc. Chip, Coconut and Cranberry.  They're delicious!

Ingredients:

125g butter - straight out of the fridge and roughly chopped
70g raw sugar
100g dark brown sugar
1 egg
160g SR flour
80g choc. chips
80g coconut - shredded or dessicated
80g craisins - dried cranberries.  Substitute with sultanas or any other dried fruit.


Preheat oven to 180C (160C fan/forced). Line 3 oven trays with baking paper.

Add butter and sugars to TM bowl. Cream until light and fluffy; 1-2 minutes Speed 3.  Add the egg and mix gently together until combined -15 secs on speed 3.
Add remaining ingredients and combine - 8 seconds speed 5 and then 10-15 secs on knead.  Don't over mix - you only need the mixture just combined.

Roll into small balls (about walnut size) and place on trays.  Allow room for the biscuits to spread.  Flatten the balls with your fingers.

Bake for 15 minutes or until golden.  Allow to cool on the trays.

Makes 3 dozen.  :)

These sound delicious, Busterman.  Have printed off the recipe and will try to make them tonight!  Your Golden Syrup Cake has been a firm family favourite for quite some time!!  Many thanks for that  . . and for the biscuits!! :D

Thanks goldfish.  I made up the recipe a few months ago and it's a firm favourite with all my mates - and the family as well.  Enjoy!

Yep, I echo golfish's sentiments. The golden syrup cake is so popular in our house. Will definitely make this one - watch out you have a following Busterman!

Read this recipe about 10 minutes ago and the biscuits are in the oven smelling delicious now. Love nice easy ones thankyou busterman. ;) :D

Just bumping these again they are so yummy kids love them as a bit different to ordinary choc chip cookies

Thanks Chookie for bumping this recipe in the "What are you cooking today" post otherwise I wouldn't have tried them.They are delicious.I made 48 biscuits,next time I will make them slightly bigger :)

CC, they are certainly nice.  I only made 30. Good size for us. I like the buttery crispness.

Gosh I completely missed this recipe and they do look yum.  Think I will bake some while our diet has been lost.
Most ingredients are in the cupboard too.
