Double Choc Fudge Brownies
250g dark chocolate
1 cup caster sugar (or raw)
4 eggs
1 tspn vanilla essence
100g plain flour
45g SR flour
55g cocoa
Extra 125g choc chips or chopped chocolate (optional)
Preheat oven to 160° and line a 20cmx30cm baking tin with baking paper.
Add 1st lot of chocolate to TM and chop for 5 sec speed 8.
Melt for 3 mins 50° speed 4. Or til melted.
Add the rest of the ingredients except the 2nd lot of chocolate and mix for 5 seconds speed 4. Scrape down and mix again, then add chocolate and mix for 10 sec speed 4 on reverse. May need spatula to help with this.
Pour into prepared tin and bake for 45-50 mins or until firm.
Cool for 10 mins in tin and then on wire rack. Dust with icing sugar if desired and cut into pieces.
I converted this one off the packet of Woolies Home Brand cocoa today. Making it in the Thermothingy is so much easier than what it says to do on their packet!

cookie - They smell & taste lovely, thanks Nikkit. DD decided that they are perfect with a little ice-cream all over them. I used Lindt Orange Intense chocolate.

These sound nice and I bought some Lindt chocolate on special at Woolies yesterday. $2 a block. I could use the Strawberry Intense and it would have a subtle strawberry flavour.

Ooooo Cookie - yes please! That sounds so good. Imagine the mint one - or the orange one. Looks like I'll be shopping at woolies tomorrow and will be stocking up on chocolate.

I'm naughty. When someone has Lindt on special I buy 6 or so blocks and use it for cooking as well as little snacks. ;) ;) ;) ;)

Yes I can go to the naughty corner too then Cookie, although I must admit I have never cooked with it! Must admit that I am a bit of a chocolate snob and only have the good stuff in the house for eating now. Can't eat the "cheap" choc now! ;D

Nikkit even my chocoholic DD and DH now prefer one Lindt to heaps of the cheaper varieties. I was surprised when DH commented a couple of years ago 'this is good chocolate isn't it?'

I made these today. They smell lovely, but I haven't tasted them yet. I used Orange Intense chocolate.

How did they taste?
My kids have even become chocolate snobs too, which is a shame... as if I do open a block of Lindt choccy, (hiding in the pantry with the door closed and singing so they can't hear the scrunch of the wrapper) they still hear me and line up for their share. :-))

Ooo love lindt.. Strawberry intense is my fav.. Cant stomach the overly sweet cadbury range.. Mmmm lindt
