Title: Coconut milk/cream.

I've had a go at this as described on p19 of Fast and Easy Indian Cooking.  It's all gone well except that the results have separated into a thick layer at the top and what looks like coconut water underneath.  Is this right?  Do I need to mix the two back together again?
If someone can advise I'd be very grateful.  Thanks

if u only need the cream bit,   no need to mix back together

Thanks very much for that.  I need milk so must stir it back together again.  Great! 

Suppose I didn't - what could I do with the watery bit, please?  It seems a shame to throw it away.  The only thing that occurs to me is that I could freeze it on a tray, cut it into cubes and use it instead of ice cubes for sorbet.  It might make a nice mango and coconut sorbet.  What do you think?
