Title: OMG! Pizza base (GF)

Name of Recipe:OMG! Pizza Base

This is my conversion of Jane Kennedy's pizza base in her book "OMG! I Can Eat That?". It is not your traditional pizza base, but my family really enjoyed it.

Number of People:Makes 1 pizza/serves 2
Ingredients:
1 large zucchini ( mine weighed250g)
1 egg
100g light mozzarella cheese


Preparation:
Preheat the oven to 190C
1. Roughly cube the cheese, and grate on speed 8 for 5-10 seconds. Remove from bowl.
2. Peel the zucchini and chop into several pieces. Place in bowl and grate on speed 5 for 5 seconds.
3. Add the egg and cheese to the bowl and mix on speed 3 for 5 seconds. Scrape down and process for a further 5 seconds on speed 3.
4. Pour the mixture onto a pizza tray (or a flat baking tray) lined with baking paper, and spread out evenly into a circle.
5. Bake for about 15 minutes, until golden.
6. Leave to cool.
7. Top with your favourite pizza toppings and bake at 220C until cheese is bubbling.

Tips/Hints:
I didn't have mozzarella cheese, so I used a low fat cheddar.

Oh what a great idea! I'll bookmark this one...great for when my dad has a glut of zucchini and also when my GF brother comes to stay :)

OMG. Does it taste doughy or crispy like a traditional pizza dough? Sounds very interesting.

Neither- it is definitely not crispy, but not doughy either. It is hard to describe as the egg makes it a little like a quiche, but yet, not a quiche.

This is really interesting, damn my Zucchinis have finished,  I have just bought a pizza machine so am experimenting madly at the moment I will try this , thanks.

There's a good looking non-pizza base recipe in this month's Australian Good Taste magazine from Woolworths which has a lamb mince and other ingredient base which gets topped with pizza sauce, cheese & feta.  I thought that one looked interesting too.  Not usually that wrapped in this magazine but I'm only up to page 35 and have found lots of recipes I like in this edition.

ES do you add more cheese on the top of the pizza?

Judy I don't usually buy that magazine but may do so if it has some good recipes in.

Not expensive Cookie but worth it this time I think but then that depends on what you are looking for I guess.  I am thinking differently towards food at the moment so I did find some things I will do from this one.

Yes, Cookie, I did. I spread the base with some tomato paste, a little more cheese, red onion, mushroom, capsicum, olives, ham and fetta cheese. I was careful not to overload it with too much topping.
