2 portions
Ingredients:
1 onion, halved
20g neutral oil
100g rice
200g carrots, sliced
1 tin of tomato pieces (400g)
120g water
1 tsp salt
1/4 tsp pepper
200g cooked ham, diced
2 tbsp parsley
1) Chop onion in TM, 3s/speed 5.
2) Add oil and cook 3m/varoma/speed 2.
3) Add rice and carrots and cook 3m/100C/ :-:/speed 1.
4) Add tomatoes, water and spices and cook for about 17m/100C/ :-:/speed 1.
5) Add diced ham and parsley and cook 2m/100C/ :-:/speed 1.

Comfort food for me - I used to make something similar when I first started cooking. Seems a bit simple and sloppy, but think my brain says - YES !

I did this recipe today vivacity to use up the last of the Christmas ham. Bit more than 2 serves in this household though, more like 6 serves. I didn't have any parsley and my spinach needed picking so I added 10 leaves in step 5 along with another 200g water and cooked it another 4 minutes. I served it with some poached eggs and DH licked his plate ??? ??? It has a risotto look and taste to it and he hates risotto :-)) :-)) :-)) Thanks for the posting. I've been saving this one for this time of the year.

Thanks for the feedback, Judy. My husband hates risotto (from the TMX) too. I served him the mushroom risotto from the UK TMX book and he just took one mouthful and grimaced. Oh well :-\
