Title: Chicken Cheesy Surprise Meatballs

Chicken Cheesy Surprise Meatballs:
Number of People   4:
Ingredients:
750g chicken breast
50g chargrilled red capsicum - bought
2 green spring onions
2 tablespoons green basil
50g mozzarella cut into 1cm cubes
panko breadcrumbs
EVOO


Preparation:
Place basil and spring onions into bowl, and chop. Speed 6/7 a few seconds. Set aside.
Chop the red capsicum into small pieces. I did this by hand. Set aside.
Put chopped chicken into the bowl. Speed 4 until minced. Add above ingredients,  :-: Speed 2 until combined.
Remove from the bowl and roll into a ball, flatten, place mozzarella in the centre and roll into a ball again.
Coat in breadcrumbs.
Brown in a frying pan, finish off in a 180 degree oven until cooked.

Tips/Hints:
You may like to serve these with a sauce of some kind, I didn't. I served them with a tossed salad and a potato salad.
This recipe is similar to one in the Taste magazine.

Yummy, I just had chicken and garlic meatball for lunch. will make these. :)
