Any type of curd, jam or fruit could be used in this slice. I used Yuzu curd from ITM2.
Name of Recipe: Citrus Curd Slice
Number of People: 12 slices
Ingredients:
180g softened butter
170g castor sugar
320g plain flour
1/2 tsp baking powder
280g of any curd
40g shredded or dessicated coconut (I used a bit of both to use up what I had)
40g flaked almonds, slivered almonds or chopped hazelnuts ( I used flaked almonds and chopped hazelnuts)
50g white chocolate chips (I used roughly chopped white chocolate buttons)
Preparation:
Spray a 27cm x 19cm x 3.5cm deep ovenproof dish then line with baking paper across the width (19cm) of the dish making sure it comes up a few cms above the top of the dish for easy removal of the slice.
Preheat the oven to 180oC, fan forced.
Add the butter and castor sugar to the TM bowl and beat 1.5 mins/speed 5.
Add the flour and the baking powder. Knead 15 sec give it a stir with a spatula then knead again for a further 15 secs.
The mixture will resemble coarse crumbs.
Place 3/4 cup of this mixture into a bowl, add the coconut, almonds and choc chips and set aside for the topping.
Press the remaining mixture into the prepared dish.
Bake in the middle of the oven for 15 mins - do not allow it to get too brown, it should be just starting to look a golden colour.
Remove the dish, spread the curd over the base to within 2cm of the edges.
Sprinkle the crumb mixture over the curd.
Move your oven rack up 1 notch, place the slice back into the oven and cook 18 minutes. Turn the dish if the top seems to be browning unevenly.
Cool in the dish on a rack. When completely cool, remove the whole slice using the baking paper, place into a large container with a lid and place into the fridge until the curd is completely cold (if you can wait this long). It just makes for easier cutting. Place the slice onto a large cutting board and use a large knife to cut into 12 squares.

CC - Just out of the oven. I used Tenina's Lemon Curd that I had in the fridge. It smells wonderful. Just trying to get it cooled down so I can have a taste.
OMG this is divine. We had some tonight for dessert. DH loved it. Thanks for the recipe Judy.

Boy that looks good Judy. Have earmarked this one. :D

Looks lovely Judy. Love anything made from citrus.

Just what I need to make use of lemon curd. Lovely. I think you could also use caramel filling or fruit mince in the filling too Judy.
-
It sets up beautifully in the fridge overnight Kimmy and my Mum loved it.
With the rest of my batch of Yuzu Curd I made a version of Chookie's Lemon Kefir Ice-cream (http://www.forumthermomix.com/index.php?topic=14647.0) but I guess I should call mine Yuzu Ice-cream ;)

I have been mixing in nuts etc for a while, never thought of chocolate chips.

Looks great Cornish, I must make some curd so I can make this. :)

Glad you and DH liked it CC.
Try the added chocolate to the topping DJ, see if you think it adds anything to it. I didn't think of Chookie's recipe, just went looking for a slice using curd - found plenty of course but this one sounded nice.
