Title: Recipe review - Spinach & Ricotta Gnudi with Ragu Di Pomodoro, Delicous Journeys

These are 2 more recipes that were demonstrated at Nico's recent cooking class.

It was delicious when we tasted it at the class and delicious when I made it at home.
It was even better the next day as the flavours had developed.

The gnudi was easy to make.  Nico's tip for this one was to get the ricotto that isn't completely smooth (the more textured the better).  I was glad I saw it made, otherwise I wouldn't have placed my gnudi as tightly together in the varoma tray like the recipe says.  

The tomato sauce is easy to make as well, just let it cook away and do its thing.  Nico said that whenever he sautés onions he always does it for 10 minutes with the measuring cup off (a couple of minutes or so  isn't long enough).   I did reduce the amount of oil though as he uses a lot!  Also he said when you blitz your tomatoes don't overdo it, as your sauce may turn orange.

It makes a lot, so we still have a couple of serves in the freezer.

My DH has just given me a reminder that the lemon zest in the gnudi was quite strong. It wasn't over powering or unpleasant, but if I made them again I'd go easy on the lemon zest. I was going to write this in my review but I forgot.

I made this for dinner tonight's my DH requested it. This time I reduced the lemon zest a little.

My DH said "mmmm mmmm" after every single mouthful. After he finished his second helping, he said OMG that is sensational! I think he likes it!

Thermie is working well after it's service which is great.

No Kimmy I haven't, I'm doing the 12wbt and not making a lot of new recipes from books at the moment.

Plenty of lovely things in this book though, I know Karenh has made the butter chicken (which we tasted at his class and it's delicious).

It's going well, 6 weeks in and I've lost 5.5 kgs (still a lot more to lose, but it's a start). Both myself and my DH are enjoying the recipes. Portion control is the hardest though.

I haven't been doing the 6 gym sessions a week though, I've been going 3 times and aiming for at least 10,000 steps every day.

I made the tomato sauce part of this yesterday which is lovely in its own right and will be happy to use in other ways.

I took notice of the lemon zest issue in the gnudi so only used half a medium lemon and I think it was the perfect amount (for us anyway).  Could pick up the lemon content without being overpowering.

Such a delicious meal and makes plenty so will be able to freeze in single serve amounts for DH to take to work.

I made one big one and had 5 balls left over so put them in a ramekin for an individual serving.

Served with a simple, help yourself salad.  Will definitely be made again.  :)

Boot, it's on page 72 of his latest book called Cooking Passions Delicious Journeys.  The book has Thermomix methods on the same page as traditional methods with most but not all recipes converted for the Thermomix.

This recipe is our new family favourite.  I have made it twice already and each makes enough for 8 serves we find. I really like the lemon flavour and  use a whole lemon zest.  I use a ice cream scoop to form the balls which makes it quick and easy.  The sauce makes enough for two serves so 1/2 can be frozen to make the second batch even quicker.  At our class Nicco's used some of the Ragu as a pizza base, on an olive oil short crust pastry, this was also yummy.  I did sneak some confit garlic into my second batch of ragu, not because it needed any extra flavour mainly for my perceived health benefit.
