Toasty Seed Mix for Bread
ingredients
50g sunflower seeds
50g pumpkin seeds
25g sesame seeds
25g linseed s
100g water
Preparation
Toast all the seeds. Have fun when the sesame seeds pop at you. ;D ;D They only need to be toasted lightly.
Let the seeds cool.
Pour the water over the seeds and stir. This allows the seeds to become hydrated so they don't take water from the dough.
Allow the seeds to soak for about 20 minutes. This is all that is needed. Drain.
They are now ready to be used in any bread mix.
They have a lovely toasty flavour in the bread.
i have based this seed mix loosely on one in The Bread and Butter Project.

cookie, do they keep or must be used the same day of the soaking ?

I always use it the same day Uni. Would it begin to sprout if you kept it? I guess you could toast it and keep it for a while.
