Title: Sally's Tomato Relish
Post by: judydawn on March 11, 2014, 12:01:28 am
This recipe is courtesy of Chelsea's friend Sally.  It used to be on Chelsea's blog but she no longer has recipes there and as we know everyone loves this recipe, here it is for safe keeping. Thanks djinni373 for providing the details of this popular recipe.

Enjoy with sausage rolls
Ingredients:
•   1kg tomatoes
•   1 large onion - peeled and quartered
•   1-2 apples - quartered
•   150g sugar
•   1-2 tsp mustard
•   1-2 tsp curry powder
•   pinch of cayenne pepper
•   1-2 tbsp salt
•   150g vinegar

Method:

1.   Place tomatoes into TM bowl and chop for 2 seconds on speed 4-5.
2.   Peel onion and apples and place in TM bowl. Chop for 2 seconds on speed 4-5. Do not over chop.
3.   Add remainder of ingredients and mix for 10 seconds on reverse speed 3.
4.   Cook for 30 mins, temp 100, reverse speed 1.
I place a paper towel around the mc in the hole to thicken the relish. You may need to cook longer if it is not thick enough.
5.   Pour into hot sterilised jars.
6.   Enjoy!

Always make this when the fruit and veg supplier has cooking tomatoes on offer. Yum :)

Just looking to make this recipe.
Would the sauce thicken better if it was cooked with MC off?
Not sure about using paper.
You could put basket on top to stop splashing.
Just wondering.

Boo I don't use the paper either. I have the MC sitting on an angle at the top to let a lot of steam out and protect the wall behind ;D. Recipe doesn't say so, but green apples work best and I use up to 3 (depending on what needs using) and peel half. After about 20 minutes I reduce the heat to 90 and cook for about another 20 minutes (depends on the tomatoes and how thick you want it as to how much longer). Takes a few days for the taste to mellow but this relish is lovely. Enjoy.

Edit: Shd have mentioned that this doesn't seem to thicken much when cooled.
