Title: What to do with left over fruit purée?

We gave quite a lot of left over fruit purée from the Bellini bar at today's engagement party. Any suggestions on what to do with it will be greatly appreciated.

Freezing is an option but freezer space is limited.

Den, I make fruit leather.  I spread it on oven trays and cook on the lowest oven temp until dried out. I tend to leave it vernight n about 90. I do it in the dehydrator these days but did it n the ven for years. Sometimes you need to add some water to get a spreadable consistency.

Thanks Wonder, that's a great idea. DD is going to give that a try. Do you line the oven trays?

It all went very well Cookie. The rain held off until about  1:30 ANC everyone had a good time.
