Oat,Pecan and Raisin Cookies.
85g Butter,softened.
160g Light Soft Brown Sugar.( I used Billingtons Muscovado)
1/2 beaten egg or 1 egg yolk.
2 Tbsp Sunflower Oil ( 2 x 15ml)
125g Plain flour.
1/4 tsp bicarb
1/2 tsp ground cinnamon ( next time I will increase it to 1 tsp)
75g Rolled Oats ( I used Jumbo Oats)
75g raisins
75g pecans,roughly chopped.
Preheat oven to 180c or 160c fan forced.
Line baking trays with nonstick baking paper
1.Place butter,oil,egg and sugar into the TM bowl.Mix 15sec/ speed 5. Scrape down the bowl with a spatula and mix again 15sec/ speed 5
2. Add flour,bicarb,cinnamon and oats and mix 30sec/ ::.
3. Add nuts and raisins and mix 10sec/ ::
4.Tip out the dough into a bowl.Using your hands roll into walnut sized pieces and place well spaced onto baking trays then flatten slightly with the palm of your hand.
5. Cook for 20 minutes until golden brown and firm to the touch ( I turned my trays half way during cooking)
These cookies are very crisp. Made approx 24 x 30g cookies

JulieO - Well these are just gorgeous. I reduced the sugar down to 150g and used the whole egg. I also made them bigger (got 9 big ones) and would do it this way again. I also drizzled some with a bit of chocolate that I had left over. I was trying to replicate a home made biscuit that our local health food shop sells and these came pretty close (DH says these are much better), so am very happy with these and they are sooo easy to make too. Thanks Cornish.

They look very tasty, CC. Was it hard to split the beaten egg into two? I can just see the mess I would get myself into if I tried that, I would have to take the egg yolk only option. Do you think the cookies would be softer if you were to use the whole egg?

Not hard to split the beaten egg Marina. :D :D It's a very forgiving recipe so if your hand slips and you add the whole egg it will be fine and still have crispy cookies ;D

When I need to split an egg I beat it, then put it into a measure. I then decant half.

Do you think I could use oat bran instead of rolled oats?

I don't think it will work with Oat Bran kyton.
