Title: JD's Hamburger

I am not a hamburger person and would never buy one from a fast food outlet but I found a burger patty recipe during a recent clear out of very old recipe cuttings with the intention of making it.  Well today was the day and I have to declare it was so enjoyable that I would have a burger party to share it with friends & relatives.  Not saying I will but that's how much I enjoyed it.  ;D  

Name of Recipe: Hamburger with the lot
Number of People: Makes 6
Ingredients:

370 - 400g minced beef
1 French shallot cut in half
1 confit of garlic
small Golden Delicious apple, cored, left unpeeled and quartered
15g skim milk powder
1/4 tsp salt
1/8 tsp pepper
2 tsp ketjap manis or soy
30ml water


Preparation:

Chop the shallot, apple and garlic 2 sec/speed 5.
Add remaining ingredients and mix 15 sec/reverse/speed 2.

Form into 6 thin burger patties and set aside until needed.

I cooked mine in a bit of butter in a non-stick pan on the stove top for a total of 5 minutes on medium heat.

Spread the roll with butter, topped with Alyce's beetroot relish or use beetroot slices, lettuce, mayonnaise, tomato, beef patty & sauce.  Finished off with a fried egg and would have added some caramelised onion if I had any.

I've frozen the remaining 5 patties for more pleasure down the track :)

That sounds, and looks, good Judy.  We're having burgers tonight too - vegetarian, of course, and 5:2 diet compliant (also minus the burger buns!) ... what's left without meat and buns, I hear everyone ask, well, everything else except high calorific condiments!

We occasionally have homemade burgers on a Sunday night. It's fun. I have been known to host a burger party too. I took orders before the guests came and had the required number of chicken, beef etc burgers. I made the buns and then after the meat was cooked people assembled their own burgers. It was fun. A very casual evening. In fact,I think it was after crabbing one day.

Love hamburgers too. I write up a list and let the children tick which options they want.....toasted buns, egg, beetroot, pineapple, bacon, etc. lots of fun.

It is great to do the hamburger thing when the GK come and have them make their own; that way they eat all their dinner.

JD just a quick question please.
Could I substitute corn flour for the milk powder?
I need to make the burgers dairy free and wondered if the milk powder was for taste or texture.

I wonder if there is a soy / almond / coconut milk powder you could use as a substitute?  Because I don't cook with meat I don't know how that would work ... in fact, I don't even know if there is an appropriate dairy free powder substitute.  You could perhaps pop in to your nearest health food store and ask them.

Cornflour is a binder Boot, milk powder would be for flavour I would think.  Perhaps Marina's suggestion of coconut powder would be a good substitute, not sure how strongly it would flavour the mince though.  Perhaps use half the quantity and see how it goes or as Marina said, speak to your health food shop (or google it) to see if there is another alternative.

Milk powder is quite difficult to substitute.
I think coconut milk powder is the best but has a very different taste.

Just omit the milk powder btbt, I do in any recipe that calls for a small amount if the rest of it is df.  ;)
