Hi wonderful thermomixers,
I'm having a go at a making some bread (usually don't eat it as a family member is gluten free) but thought I would make some bread to go with some dukka I made in Timmy and, well... I like a challenge!
I'm using Cookie's vienna loaf recipe and all was well until I pressed the :: button and the symbol didn't come up on the display like the :-: does. I've never used this function before so I don't know how it should behave. I'm pretty sure it should be doing something...please help. Thanks!!

Hi JenJan,
Have you got it set to lid closed? I think kneading is the only function where you need to do that, so it is easy to forget.

No symbol comes up on the screen when you use the knead function. It goes forwards and stops, then backwards and stops. When it is going backwards it will display the :-: symbol. Otherwise the only thing showing is the time. Good luck.
OOPS, SORRY. A big apology here. In between balancing books I am making some bread. For the first time in 6+ years I have noticed the :: function on the screen. So I am really sorry but the :: does come up on the screen.

Because I hadn't realized that the closed lid position was my problem, I had gone ahead with "kneading" the dough with ^^ function. After the first rise, the dough was sticky so I added more flour so it felt more like I thought it should and put it onto a tray. The dough didn't rise a great deal the second time and I thought about giving it more time but I baked it anyway. What I got was a ciabatta type loaf and it was delicious and crusty! Family thought it was a success! Yay! But I will have another go with the :: function and hope it does indeed work! :)
I'm using an Italian baking flour and I believe the European wheat grain is slightly different from Aussie wheat. The result should be slightly different - right?

I sometimes use the Italian 00 flour for my sourdough starter.

Yay! The knead function does work! ;D
I used the same Italian flour and got a similar sort of result though with a little more rising - very nice with a wonderful crust. It's a '0' milled baking flour for bread. I've used '00' before to make pasta, but I've not used it to make bread...

Wonderful news JenJan.
I use Laucke Bread Mix for everything except feeding my starter. He seems to prefer the 00 flour or straight Bakers' flour. I'll do anything to keep him happy. :D :D

My starter gets tough love. I feed it with the Laucke mix. Seems ok.
JenJan, the recipe you are using is pretty slack. Try making it without adding too much extra flour.
