This was made as a side dish to some Italian pork cutlets. It was quite enjoyable and quite different to a bland cabbage. Served with asparagus and mash potato as well and what was put on the plates was all eaten. Guest for dinner said he didn't eat cabbage often but really enjoyed this. Adds a nice colour to the plate as well. As an added bonus when you finish cooking your TM jug is nice and shiny!

Does red cabbage taste different to green CP? I've only ever had a bit of red in a mixed coleslaw salad when out but have never eaten red cabbage cooked.

Thats a good question - I don't know! I've eaten both and I've eaten them in a combined coleslaw but I haven't really noticed if the flavour is different. I consulted my Stephanie Alexander bible and all she says about the red cabbage is that its "dramatic".

I reckon you could substitute anything red for white eg cabbage, wine, vinegar and onion. I might try that one day when I have a green cabbage in the fridge.

DH often cooks up cabbage, shredded then after it has simmered for ages and ages he adds vinegar to it. I'm not fond of it but he and DD enjoy it.

cabbage is very very good for you - can't tell you how often it appeared in my Michelle Bridges menu's but it was ALOT (too much)
