Title: Lambs lettuce with beetroot and walnuts salad

Name of Recipe: Lambs lettuce with beetroot and walnuts salad
Number of People: 4
Ingredients:

0.5 lt water
200g fresh beetroot
200g lambs lettuce
50g walnuts
5 tbsp walnut oil
1 tbsp red wine vinegar
1 tbsp balsamic vinegar
pinch salt
2 pinches pepper

Preparation:

1.  Put the water in the bowl.  Put the beetroot in the Varoma, and steam 20 min / varoma / 2.  Peel the steamed beetroot and leave it to cool.  Discard water.

2.  Wash and dry the lambs lettuce.  Put in a serving bowl.

3.  Put halved, steamed beetroot in the tmx bowl with all the dressing ingredients (the ingredients not yet used).  Chop and mix for c 4 secs / speed 3-4 . 

4.  Pour into the lettuce and mix through.

Tips/Hints:  Replace the lambs lettuce with any other lettuce.  240 Kcal

Thanks Caroline - almost the same as one that Tenina posted yesterday from our Melbourne cooking class two weeks ago.
