Title: Mango Fruit Cake (no added sugar and very little fat)

Mango Fruit Cake
Ingredients
500g mixed fruit (buy it or make up your own)
1/4 cup water
500g mango pulp, can use frozen
2 tablespoons butter
2 eggs
1½ teaspoons carb soda
1½ cups SR flour
Preparation
Heat oven to moderate and prepare tin. (either a loaf tin, 20cm square or round)
Turn your mango into pulp. I used frozen and just blitzed it up.
Place fruit, water, mango pulp and butter into bowl. Cook at 100 degrees on reverse, speed 1   until  it reaches 100.
Then drop temperature to 90 and cook for about 3 minutes.
Add the eggs, (I beat mine a little first),carb soda and flour. Mix until just combined on reverse. Complete mixing with a spatula. You don't want to break the fruit up.
Put into tin and cook about 30-40 minutes. Don't over cook and it is best kept in the fridge.
Alternatively you can boil the fruit, water, mango and butter in a saucepan, cool and add the other ingredients. Then bake.
This recipe was originally for the Dream Pot but I have converted it to Thermomix.

That sounds really nice cookie.  I've just eaten a huge, sweet, messy mango and enjoyed every bite of it.

Oh I would love to make this but I can't get mixed fruit or dried peel here in the US. Mangoes aren't any good either. they come from Mexico, are large and looks great on outside but lacks the sweet mango flavor.

I'm glad you like it Denise. Mep could you use unsweetened tin mango?

iCloud probably find frozen mango from Asian grocers but it's the dried fruit that I would have problem finding a substitute for.

That's interesting. I thought you would be able to buy it all over the world. Do they have anything at all like dried fruits?  I'm very curious.
