Hi there
What speed do I use to shred lettuce and
 how long?

I wouldn't use the Theromix to shred lettuce because of the delicacy of it and the water content.  I've never seen a recipe that uses the TMX for this purpose, cabbage yes but not lettuce to my knowledge.

The TM is too powerful to shred lettuce.I always tear my lettuce by hand.
