Name of Recipe: Rockmelon Ice Cream originally presented by Fiona Hoskin, and interpretted by others
Number of People: Depends on your appetite
Ingredients:
40g sugar
5 cardamon seeds (not pods !!)
1 lemon or lime (pith and pips removed - keep zest aside)
½ rockmelon – cubed and frozen
ice cubes
2-4 Tblsp of cream
Preparation:
Place cardamom seeds and sugar in the TM Bowl and mill for 15 seconds on speed 8
If using lemon or lime zest (see note in hints) add to bowl with sugar, grind on speed 8 for 10 seconds.
Add frozen rockmelon, and some ice cubes (to help incorporate the fibre of the fruit - Fiona ) and the peeled and seeded lemon and process for 20 seconds, speed 9.
Add cream and increase speed to speed 9 for 1 minute. (Add more cream if mixture looks too dry)
Tips/Hints:
You could also omit the lemon zest for a smoother texture (and for personal taste resons - Fiona).
You can double the ingredients; method stays the same except mill the cardamom for 15 seconds.
