Does anyone have a thermomix recipe for soda bread, please? Or alternatively a recipe they know is good which I could easily convert? I have a demo on Monday with a lady who can't eat yeast.
Of course, if anyone knows of any other bread type recipe good for those who can't eat yeast, that would be great too.
Thanks!!!!!!

Now that would be handy, I have an Aunty who would love a TMX but won't buy one as she can't justify it in her mind (YET ;) ;)) but she is allergic to yeast and dairy and a whole host of things. Would love to be able to make her a loaf of soda bread. She makes sour dough atm

Check this one out Carolyn - haven't done it and it isn't TMX but I'm sure you could convert it.

This is the recipe that I use all the time and the bread is identical to bread cooked in an Irish farmhouse we stayed in 8 years ago.
It is dead simple and needs very little kneading. I don't bother with the TM, but have altered it to how I would make in the TM. The processing times are fairly general and may need tweaking!
Irish Soda Bread
450 gm plain flour
1 tsp heaped baking soda
1 tsp salt
340-400 mls buttermilk.
Put all ingredients in TM blend on 6 for 5 seconds, then on :: for 1 minute.
I bake it in a cast iron camp stove or my Le Crueset casserole without the lid. Slash a deep cross in the top of the loaf and cook at 200C for 50-55. Loaf is cooked if it sounds hollow when tapped.
Serve hot with butter!

Thanks Amanda, will try that for ourselves, no good for the Aunty though as she can't have dairy either. Will have to really put my thinking cap on *ouch* :-))

Thanks, Amanda and Judy. Faffa, would it work with rice or soya or almond milk, do you think? You could give it a try to see how it tastes. I wonder if you can do the lemon juice trick to one of these milks to make a buttermilk substitute, like you can with normal milk? It would be interesting to experiment and find out.
I used to be intolerant to all forms of dairy, so I just used soya milk wherever milk was required in cooking. It worked in everything but a cup of tea ;D There was only soya milk available back then, now there are the 3 options (that I'm aware of - there may be more). And they even do soya milk that can be used in a cup of tea! I would have thought it was definitely worth a try to see how the bread turned out.

See Caroline, there is nothing wrong with your pregnancy brain - you champ!!! I will find out what she uses and then have a go at it. It may as you say need just a little lemon juice or vinegar. I want to find out what she uses anyway and research making it as another option to present to her :)

;D The old brain emerges from behind the pregnancy veil every now and again now - it isn't as bad as at the beginning. Praise God!!!!!! :D :D :D

ROFL - gosh I don't think mine is back to normal YET and DD is 2 1/2 !! - my kids keep trying to work out how much brain I have left if you "apparently" lose half of it with each pregnancy - now that is scary :D
-
LOL. Yes, I should perhaps make clear that the brain which emerges occasionally is the post DD (almost 6) brain, most definitely NOT the (much sharper) pre DD brain :D I've pretty much given up on that ever coming back ... :-))

In my experience, what little brain you regain after birth is totally destroyed by teenagers!! :(

This conversation is making me feel much better. I feel like I've been in a haze since my 17 month old was born and thought it was just me. It's so hard to think clearly about things even when I'm not sleep deprived. :)

Ain't that the truth, Chelsea. Don't worry - it's normal. Not particularly fun, but normal ;D
