Name of Recipe: Avacado Dip
Number of People: NA
Ingredients:
1/2 onion (red or brown)
1/2-1 small red chilli - de-seeded.
1 block (think they're about 200g) Cream Cheese
1 avacado, peeled and seed removed.

Preparation:
Add Onion and chilli to bowl and chop on speed 6 for 10 seconds. Push onion mixture down and repeat.
Add cream cheese and avacado and mix on speed 7 for 30 seconds.

Tips/Hints:

This is an adapted recipe from the EDC. After previously trying the standard recipe I was disappointed as it looked nothing like the picture. Was also looking for a simplier recipe that 2x Miss 3's were likely to eat.  It was gobbled up very quickly but the guests with fantastic reviews.

Yes, I can even see people who don't like avocado eating this one.  Dolloped on a baked potato too would be nice.  Thanks ILB :-* :-*

My family don't eat avocado, so I think I will make this one night for dip to have with our evening drinks. I guarantee they will enjoy it.  They probably won't even know.

Sneaky  ;) ;) Hope it works.  DH doesn't like avocado either so I make that chocolate drink with it in and he likes that.  Maybe this is another way he would eat it too, although not on a baked potato like I suggested earlier as he hates those baked potatoes with toppings.  I could live on them myself.

Ohhh that sounds lovely on baked potato!  I'm paying for having the dip and cheeses today - but you have to live and enjoy what you eat  ;D

It is quiet creamy Thermomixer but not overly rich.

Well I made this today to take to a friends place and was very disappointed - nothing like what I did last time. Thankfully I had a second avocado in the fridge so this time:

1/2 red onion
1/2 - 1 small red chilli (optional)
1 avocado
250g Cream Cheese
Juice of 1 lime or small lemon
salt & pepper to taste

Place onion in bowl and chop on speed 5 for 10 seconds. Scrape down using spatula.
Add all other ingredients and mix on speed 4-5 for 30 seconds.

I think I'll resecue the first batch with some lime juice and we'll make baked potatoes tomorrow night - yum!

Lemon or preferably lime juice is a necessary ingredient in guacamolé, otherwise it is much too bland.  The citrus juice "brightens" the flavor.   I like to dust a small amount of cayenne in streaks over the top just before setting it out.  It makes it prettier and if people don't like that tiny extra "bite" of spice, they can easily avoid it. 
I like my avocado rather chunky, rather than blended smooth.   Here, when one sees the smooth, creamy type, it is immediately thought to be store-bought, instead of homemade.

here they've dropped to $1.75 each and Mum just brought a bag of them fairly cheaply too.

A delicious way to eat avocado dip is to layer it with a dip of sour cream mixed with taco seasoning - 300ml sour cream and 1 pkt Taco seasoning or a 2 Tbsp of homemade seasoning.
Mash 2 avo's with lemon or lime juice and lay on the bottom of a shallow bowl. Place sour cream dip over avo dip.
Top with grated cheese, then a salsa of finely diced, seeded tomatoes, finely sliced spring onion and sliced black olives.

Serve immediately with corn chips. To make ahead, grate cheese and make salsa, then add just before serving.

The other reason for using lemon or lime juice in avocado dip is to slow the oxidisation process which eventually turns it brown.
