Title: Bread baking - bread tins
Post by: Meagan on September 28, 2009, 03:48:49 pm
Ok I am perfecting my bread making (bought a bread tin at 'All about bread' last week which I am really pleased with) and have a few questions. Do many of you make more than one loaf at a time? Wondering if it would be more cost effective to buy another tin for bread baking and use the heat of the oven just every couple of days and freeze a loaf rather than baking more often?

Thoughts? ;D

My recipe makes enough dough for 2 loaves or 1 loaf and a dozen small rolls - I have 4 bread tins and often make a lot at once as once the oven is on it may as well be full! Always slice and freeze my bread and rolls. I also only use fresh yeast as much cheaper than dried.

I always make 2 loaves at a time.  I think it's quicker as I'm in the mood, have all the ingredients there, oven's on etc.  Last night I made one ordinary and added sultanas, sugar and cinnamon to the other.  First time I've tried that, and I think the fruit loaf should be taken out a bit earlier.  Most of the sultanas taste a bit burnt.  I'm thinking maybe I should soak them so they're really plump before cooking, as they're quite dry so burn very quickly.

I'm determined to perfect fruit loaf as it's a staple food in our house.  I really liked the Varoma recipe, but the loaf is small, and it's more fiddly.  And I hate throwing all that water down the drain - just can't do it in the Darling Downs.

Which recipe do you use?  Mine (EDC) only makes enough dough for one, and then I start again.  Would be easier to make a bigger batch of dough, but don't want to overload the machine.

I usually make at least 2 at a time, as well.
Bread always freezes well.

I have 2 tins - prefer to use as much of the heat generated to do a few things.

Yes that is me too, shove as much as I can in the oven at one time   ;D, I often have trays lined up ready to go as my oven takes FOREVER to heat up and I can get 3 or 4 things ready in the TMX before it even reaches temp lol

Sounds like the airports with planes taxi-ing onto the runway - stand clear faffa's coming thru.

Hi All

I only have my Thermomix about 12 days!  I have yet to try a bread recipe - which one would you suggest for a beginner?  I have bread tins from when I used to make bread with No Knead products and I'd like to make two loaves at once since the oven is on and I have two tins - is that possible in the machine - or would it overload? :-\

Cheers,  Sylvia - Melbourne

This is our favourite recipe - just use half brown flour or 200gm milled wheat for a brown loaf.

Try the TM31 bread - simple enough and make 1 & 1/2 times the amount and let it rise in the tins in a warm place rather than sticking straight into the oven.  I prefer when the bread goes straight into the hot oven method.
