Cheatin' Pecan Pie:
This amount of filling is ample! Easily makes one 9″ deep-dish pie or 24-30 small tarts. If making one large pie it’s advisable to partially bake the shell first, but I don’t do this with the tarts — just fill from frozen.
Ingredients:
100 g. sugar
75 g. butter
225 g. corn syrup
3 eggs
160 g. pecan halves or pieces, or a mix of both
1 tsp. vanilla
Preparation:
- Boil together sugar, syrup & butter in bowl for 8 minutes on Varoma at speed 1
- Add eggs, pecans and vanilla on top of boiled syrup and process for 6 seconds at :-: speed 4 to mix
- Pour into pastry.
- Bake at 350°F for 35-40 minutes.
- Cool before enjoying.

Tips/Hints:
If you visit the blog to see the photos you'll see how this recipe lends itself well to being topped with a Chocolate-Nut "Ganache"... you can easily use the version from page 148 in the EDC. or make your own adaptation as described on the blog page for this pie.

Thanks you all! These pseudo 'videos' are fun to do, though quite time consuming. Sadly, the folks in Canada don't seem to be interested in Thermomix at all. All I can say is that the product is so good that it speaks for itself and one day I trust more folks will come to know this.
It's been quiet on the blogging front because I've bee sick with flu here :( for the past few days. Yet... still, my family was able to go ahead and have some great meals thanks to Bimby. I even got out of bed three times for about 3 minutes each time, in order to make bread. Now that's something I could not have done without Thermomix. Trying to cook when you are sick is usually a nightmare. But I even made a quick feel-better soup :) without any effort at all. ;)
Anyhow, thanks again for your comments. Yes, the worst thing about this pie is that it is TOO EASY to make!

Good question Nay-nay! I'm not sure on that one... I would hesitate to say 'yes' because maple syrup is much lighter than corn syrup, and more runny... but it would certainly taste good if it were doable. Tebasile left a message on the blog to say she will be trying a version with corn syrup substitute, but I'm not sure what exactly she has in mind...
I'll say one thing... it would sure cost a LOT more to substitute maple syrup... too much for frugal me I fear, but I'd love to read about your experiments...

Mmm too runny?? Well I'm thinking the Golden Syrup we have over here in Aussie Land made from sugar cane would be a cheaper and thick substitute.

I googled corn syrup substitutes when I noticed it in this recipe and most sites recommended using golden syrup or honey. I think golden syrup would be better in this however. You could also try a mix of glycerine and golden syrup. One brand of glycerine (Fauldings??) is actually made from corn and can be found at most chemist stores.

Ha ha Thermomixer! :D ??? ;D That is more than funny! (Where is the emoticon of the yellow ball rolling on the floor peeing her pants in uncontrollable laughter?)
Now don't tell anyone I said this, :-X :-X :-X But the job of being a consultant in Canada is truly, I think, seriously, overwhelming. So this way,(blogging, and staying up all night fine-tuning pseudo slide shows that make my kids roll their eyes in embarrassment) I'M iin the priviledged position of being she who has the most fun! No pressure, no commitment... Hey, it's almost like being single again ;) except that really, I am now married to the wee machine that I love so dearly. Have you noticed how cute and 'stout' he is... just like a real live man! ;) and what's more... he FEEDS me!!! ;D
But we digress.

Has anyone made a batch of these little ones and frozen the left overs? I am wondering if they would be a good dessert to have stashed in the freezer for when unexpected visitors pop around.

My DH who has pretty much ignored the TMX since I got it last July, decided to make a pecan pie. Pastry was from For Food Sake (vanilla bean pastry) heres the result.
