These are excellent and adaptable to many different flavours.
The dough will keep for a month in the freezer or a week in the fridge.
Refrigerator Cookies
180g butter (needs to be butter, not Dairy Soft or margarine)
1 cup brown sugar
1 tsp vanilla
1 egg
2 1/4 cups plain flour
1 tsp baking powder
Preheat oven to 180 degrees. Have ready two large pieces baking paper.
Cut butter into cubes if it's straight out of the fridge.
Blend butter, vanilla and sugar on speed 6 until creamy. Add egg and continue blending for about 10 seconds.
Sift flour and baking powder together and add to *: . Use :: setting to blend the dough.
Turn out onto one sheet of paper and cut in half. (dough is very soft)
Roll one portion into a sausage shape around 30cm long and roll in the baking paper, twisting ends to seal.
Repeat with other half of dough. Place in the fridge for 30 minutes or until you need it.
When ready to bake, pre-heat oven to 180 degrees C and prepare two biscuit trays with baking paper.
Cut the logs into slices about 75mm thick. Place on baking trays with about 2cm between. Bake for 15 - 20 minutes.
VARIATIONS
Gingernuts
Add 3 tsp ground ginger and 1 tsp mixed spice to the flour mixture:

Fruit Spirals
Add 1 tsp mixed spice and 1/2 tsp ginger to the flour mixture. Roll each dough portion into a rectangle and spread with fruit mince. Roll up swiss roll style in the baking paper
Macadamia
Toast 1/2 cup macadamia nuts and chop in TMX. Add 1/2 cup coconut and the nuts to the dough and blend gently on :-:

I haven't tried chocolate, but I would probably replace 1/4 cup of flour with 1/4 cup cocoa. You can also add choc chips. I would use the tiny ones and press them into the cut biscuit before baking.

love the convenience of refrigerator cookies. I used to use a similar mix regularly but must admit since having the TMX I haven't bothered. Thanks for reminding me meganjane

Thanks MJ - good stuff - a great recipe(s). Also getting a bit snappy with the photos - whole new level - I am just glad I can get one on there. Now I'll have to find suitable frames ;) :-* :-* :-* :-*

The photo creativity is due to looking at Thermomixer's photos - always the TMX and the little card. So cute!
It's easy to insert photo frames if you use Photobucket (http://photobucket.com).
I upload all my photos straight from my photo card to Photobucket. Then, in the edit mode, add frames. I'm not sure if this is available with the free version of PB, but it's really cheap to join and then there's no ads.

This one is going straight to my recipe file thanks MJ with the amount of biscuits I make each week! The fruit ones really appeal to me...to bad about everyone else in the house lol. Maybe I might be in for a chance at a bickie and a cuppa for more than the day of baking :-)) :-))

LOL - I haven't worked out how to put a watermark with my name on so used the little picture to be my signature - now I have stuck with it.
Need to find some kid to show me how to use Photobucket ;)

I purchased this program http://www.easephoto.com/ (http://www.easephoto.com/) during my ebay days and I love it for watermarking and resizing. It's fairly cheap as well and very easy to use ;) ;)

I just had the thought that if I left these in the fridge ready for baking I reckon the kids would eat the raw dough in one of those open the firidge and hope that more food has magically appeared since the last time they opened it 5 minutes ago!! :o :-))

My mum used to make a copha version of refridgerator biscuits. Has anyone got such a recipe lurking?
