Chocolate Biscuit Sponge Cake
Ingredients
150g Dark cooking chocolate
1 packet plain Marie biscuits (mine weighed 210g)
100g soft butter
75g sugar
3 eggs
2 teaspoons baking powder
Preheat oven 180º
Firstly blitz chocolate 5 seconds on Speed 5, so still some chunks, keep aside.
Place biscuits in jug, and 15 seconds speed 5 to 10 until powder.
Add remaining ingredients and mix for 30 seconds speed 7.
Add choc pieces and stir in with spatula. Pour into silicone mould. And voila...straight into oven!
Use a small mould/dish as it doesn't rise that much. Sprinkle with icing sugar.
It makes a lovely small cake, best eaten warm (but NOT hot!) with a cup of tea!

Oh Cookie...it truly is lovely! I made it last night, and we have demolished it! Even for breakfast the kids have gobbled it down! Have been working out to try and make it healthier, so am going to give it a go with wholegrain marie biscuits, a carrot and grated apple instead ogf the chocolate, will let you know, but its very easy, quick and very very yummy! :P :P :P
