Hi all.  I'm Sam from Perth (born in Hamilton was reading a Hamilton/Horsham post earlier), I've had my TMX for a day now. 
We've been married ten years in Feb, and DH was planning on buying an eternity ring.  I convinced him the ring wasn't going to help me at all, this was a far better buy for us.  We have three children under five, and DH works three/four nights a week, it is going to help our family in so many ways. 

We've had a really busy weekend so I've only had a chance to do the potato cakes for lunch followed by the sorbet, due to not many ingredients in the cupboards.  The boys didn't really take to either meal, I've never done potato cakes for them before and the sorbet was pretty sweet.  Thinking the strawberries being so fresh and sweet naturally, didn't require as much sugar?  I'll try it with the lemon next time, Meagan's demo sorbet is going to be hard to beat!

Anyway I look forward to roaming around here for recipes and tips and chatting along the way.

heehee sounds like a great idea!

yes, most of us reduce the sugar in the sorbet and the potato cakes are not one of the best recipes in the book (ie: they are a fail lol)

Hi & welcome to the forum Sam.  Nice to hear you chose a TMX over an eternity ring (you can always get one of those later ;) ;) ;)) and if you are anything like me, half the time you won't even wear your rings.  I take mine off at night and then forget to put them on in the morning, I go out with naked fingers a lot of the time.  Sounds like you are doing what most of us did to start with, cooking and not exactly happy with the outcome. Like you, sorbet and potato cakes were the first 2 things I tried too.  Now it is time to tweak the recipes to your own taste eg less sugar in the sorbets, heaps less time chopping the potatoes for the potato cakes.  How we hated that recipe when I first did it, nothing like our mock fish we were used to. I now
chop 3 potatoes (cut into large chunks) on speed 5 for 2 seconds, check to see if it isn't too mushy and do it some more if it is too chunky. If there is too much starchy liquid in the bowl after chopping, I drain it away and then add an egg and mix it by hand.  This makes 6 potato cakes. Although Mum used to use a tablespoon of flour in hers, I never have added flour to mine or onion either.  This is the way we like them but you can adjust the recipe to your own taste - it is all in the chopping.  Good luck, keep trying and you will get there eventually. Nice to have you on board.

I too am a naked finger person 99% of the time lol  :-))

It won't take you long to learn to tweak the recipes to your own liking. You soon learn to gauge sugar amounts etc. We did a sorbet at a demo yesterday with strawberries bought from  a Russell Road grower (your way ;)) and as soon as I saw them and smelt them (they smelt like REAL strawberries IYKWIM) I knew from experience that I wouldn't need much sugar!! It was to say the least divine ;D

Your boys will soon be eating what you make from the TMX - otherwise they will go hungry as you won't want to cook any other way.

Welcome Sam.  I adjust the sugar content down in many of the recipes from the EDC- you will find your own judgement will give you the result that suits you and your family. With 3 children under 5 the TMX will have real benefits for you. Hope we see you at the get together next week.

*Waves* hi Sam  ;D I was going to give you a buzz today!
I always put one lemon without the skin/rind/pips and with a strawberry sorbet I only ever put 100/120 of sugar. You can also put in half or a whole banana as well.
I forgot to say to you that I reduce the amount of sugar in most of the EDC recipes (everydaycookbook) as I find them all too sweet for me.

Welcome Sam.  What a wonderful idea to get the Thermomix. I used to be ringless person and then a few years ago changed. Then I was able to persuade my DH to buy me a beautiful ring I had seen at Linneys for my 60th birthday. He eventually succumbed!!!
I hope you can make the get together on Wednesday, it would be lovely to meet you.

Thanks for the warm welcome!  Bonus that there is a meet so soon after getting our TMX, I will try to make it, I'd love to join in.

I made the crunchie icecream slice to take to my BIL's for tea tonight.  It was a hit all round.  Thankfully none of it has come home with us, the boys don't usually eat sweets, so they were a little high going to bed.  I couldn't believe how quick it was to make, my first ah it is quick experience. 

About to grab the book out and see what would be good for tomorrow.

Welcome Splitsea.  Glad you found us (thanks to Meagan :-* :-*).  Wish MrsT was as prepared to forgo the finger stuff for kitchen gear  :( :(

We are all different Thermomixer.  Some women just love their jewellery and as you probably know, keep a woman happy and your life will be so much easier.  We have ways of making your life miserable  :-)) :-)) :-))

We are edging ever closer to the 1000 member mark! Welcome Splitsea - I'm glad I got my eternity ring on my 10th!!- DH would have tried that one if we knew about TMX then!! That ring represents the 9 Anniversary's before it that I got nothing.   :-))  I too couldn't believe how much sugar we went through after buying the TMX.  :o I now cut the sugar content in half in any recipe and try using honey for some things. But I still think it's better than buying all the packets and bottle of stuff we used to buy - we just didn't know we were having the sugar.  ;)

With the Thermomix we know exactly what is going into our food, even if it is a bit of sugar.  That's what I really like.

Welcome, Splitsea!  I'd have chosen the TMX too (although both would be nice  ;) :D )

And NayNay, I have to agree with you.  Shocked by how much sugar we get through.  But realise it was all hidden before, and for sure was still more than we're getting through.

Yes definitely nice to know what's going into our food, I'm ok with the sugar, it's all those additives and preservatives that I like to avoid if possible. 

I definitely wouldn't have had so much fun with a ring, so no change of heart here.  I have been talking with a few people about the TMX too.  My Bessemer lady rang up tonight asking if I wanted to buy anything.  She ended up taking Meagan's number and she's going to google the machine, she'd never heard of it before. 

I've made some Mulberry jam tonight, as we're lucky to have a tree out the front.  Every year it is painful to make, tonight was an absolute breeze, no stirring, no testing the temperature. 

I hope to make it to the Perth meet tomorrow.  I feel really lucky that it is on so soon after getting the machine!

Oh you still have mulberries on!! Our's have been and gone all too soon! Make sure you try the cordial - we loved it! ;)It's in the EDC page 27 and we add natural mineral water to it for a softdrink replacement. I just finished off our blueberry cordial and made up some raspberry yesterday but mulberry was really yummy too.  ;)

I LOVE fresh berries of all sorts. Mum and Dad had a mulberry tree at their place. Fresh raspberries and blueberries cost a fortune over here, so it's usually 1 punnet a season and back to frozen ones.

Thanks for the tip on the cordial!  Will give that a go this morning.  I don't think we're far from our trees season being over.  I need to make another batch of jam too.  The last batch I couldn't get to wrinkle on the plate like ususal (cooked in my saucepan) and I think I overcooked it.  There is no hope of it falling out of the jar it is very solid.  Are there any other ways you test if jam is ready?  The boys are loving the jam though. 

I made a cashew sauce last night for tea, to use on our chicken wraps, it's a recipe I converted.  I am so inspired to cook.  I hope this bit sticks around with the machine.   

It was lovely to meet everyone at Kings Park.  Hopefully next meet Paul has the day off so I'm not so sidetracked keeping an eye on my children.

The wrinkle test should have worked - especially if it is solid now.  Did you put a saucer in the freezer and then drop the jam on to the saucer and back in to cool to test ?   ???

Tip the TMX jug a bit, then watch how it goes back down.  If it goes back slowly, leaving some stuck to the sides, then it's reached the setting point.  If it just runs straight back then it hasn't.  I don't bother doing any other kind of test now, as this one is so easy.

Thanks for that CarolineW, I've always done the cold saucer trick. I just about have my strawberry jam recipe perfect so will check it that way next time.

Thanks for the tip CarolineW, heaps easier to do it that way!  I've done up a few jars as Christmas gifts for family members who I'm not meant to buy for.
