thougt i'd share this recipe while mine are baking. it's been converted and amended from a belinda jeffries recipe.
250g self raising flour, wholemeal
1 tablespoon sugar
100g dairy free butter. i use coconut oil.
80g dried cranberries
100g non dairy milk (you could add a teaspoon or two of lemon juice, and let it thicken a la buttermilk. but i'm lazy and don't bother)
turn oven onto 200 deg.
place flour, sugr and butter in TMX - 5 secs at speed 8.
add milk and cranberries - 5 secs, speed 5.
then 20 secs on interval speed.
tip onto floured board, flatten and shape into scones, 4 to 5cm thick. (makes 8.)
place in oven for 17 minutes or until golden brown. dust with extra flour if you like them like that - i do :)
