Irish Cream [like Bailey's]
300 mls. Whiskey
1 can condensed milk
1 can evaporated milk
300 mls. cream
1 teasp. vanilla
6 teasp. glycerine.
1 full dessertsp. instant coffee dissolved in a little hot water.
Method
Place all ingredients into T.M bowl and mix , speed 7 for 1 min.
Scrape down bowl.
Mix again , speed 5 for 1 min, or until well mixed.
Store in sterilized bottle
Can be served over ice, or made into a Frappe with ice, milk and more coffee if desired.
Can be added to fruit mince mixture for tarts.

Thanks chookie - I remember when Baileys first hit the market here (mannnnnny years ago !!) and there were versions with whole eggs, including the shell that got blitzed up and strained. This is easier and less prone to being gritty.
Does anyone remember that version? or am I dreaming?

I've got a version with egg, but no shell :o It's just the best and I have been told it's much nicer than the original. If anyone is interested I'd be only too happy to share. :)

julieO, I would love the recipe for Irish Cream with egg. The one I've posted has glycerine which is difficult to purchase. I did find it at Safeway , in the medicinal section..... You can leave it out without much effect. The glycerine adds to the texture and is said to be a preservative.

HOME MADE BAILEY'S
1 tin sweetened condensed milk (I think it’s about 400g?)
300ml carton thickened cream
¼ tsp coconut essence
1 cup brandy (or whisky if that is your preference - I prefer brandy)
1 ½ tblsp chocolate topping
3 eggs
Combine all in a large mixer bowl. Mix together for 2 mins. Pour into suitable containers.
Of course just whizz up in the TM. It's so simple, but really nice, lasts a while in the fridge too.

Hope that's not a blind drunk test ;) ;) ;D If you put it in the zabaglione then they definitely won't know the difference.

Hi JD,
I made the one with the eggs in it and used whiskey. One bottle for a gift and the remainder has gone already. My 23 year old son is home.
He can empty a fridge by walking past it. Very nice mixed with ice and milk apparently.

I have looked on the Bailey's bottle and the ingredients do not include coffee in any shape or form.In the Thermomix My Way of Cooking has a far simpler recipe than the aforementioned ones and I believe a Teetotaler like me could be converted with the results.
Just thought I would mention it!!!

I'm SO glad people have posted these recipes - I've been meaning to try homemade Baileys for a while. Apparently my great-grandmother used to make it, so if I get her recipe from my grandparents, I'll be sure to share it. In the meantime, I can't wait to try these - especially the glycerine one, as I have some and need to use it (also less problematic re. food poisoning concerns - I don't mind raw eggs, but my sister would likely be dead against it)...
Oh, and I've had the "does-it-contain-coffee" argument with my family and friends - family agrees Baileys original is somewhat coffee-based (or at least some older recipes contain coffee or Camp coffee essence), but since a coffee-flavoured version has just been released, perhaps we're all wrong (and my friends seem to think it never contained coffee)... I'd love to have a definitive answer!

Okay, I've just made this exactly as stated and - it's good! Very good, in fact. However, it's slightly paler than the real thing (maybe they use colourings), and not quite as strongly-flavoured. I worked out the alcohol content, and I get around 8.2%, which may be wrong - but I think I'll add just a touch more whiskey and coffee...
Overall though, it's great - my family will be very pleased! :-D

I don't like raw eggs in anything, so I would make a custard with the cream and eggs, then let it cool then add the rest of the ingredients. This would possibly make it thicker too.

I posted the 1st. recipe for the Irish Cream. I've just made another lot, but this time I put in the glycerine,( which was not in the 1st. lot)... it curdled. I tried to re incorporate it into the mix, but was only partly successful . Next time I will leave it out.

Wonder why it did that? Wonder whether it might be better to warm the and add the milks and the other bits ?
