Recipe Name: Sundried Tomato Dip
Book Name: Every Day Cooking
Tweaking details: Definitely add some milk or yoghurt. It gets quite hard after sitting in the fridge.
Review: Really delicious. Recommend using juicy tomatoes, with lots of flavour and herbs etc. The more flavour the tomatoes have, the more flavour the dip will have.
Score: (out of 5*) 4.5

I have to agree that the dip is beautiful and sooooo easy to make. It was one of the first things I made in my TMX. The only thing is it made a huge quantity, although I froze what I didn't use (half the mixture) it is better freshly made. Next time I'll try half quantity.

Thanks CB79 and boonderoostudio - great to know that it makes a lot - but good. Also good to get the info on it going hard = forewarned !!

This is one of my favourites, too, although I use the semi-dried tomatoes - they are more moist and usually have basil etc mixed in with them.

We love this too. I use light cream cheese so don't need to add any liquid.

Yes this is a fav here as well with a few leaves of fresh basil. Have made it a bit too often lately and will need to try a new one so we don't get totally sick of it. ;)

We love this one, and everyone I've given it to loves it too! We also use semi-dried tomatoes, and I add some fresh basil as well. I haven't found it too dry.

Delish! I vote for the addition of yoghurt. It's a very intense flavour and the yoghurt assists in adjusting that as well as smoothing the texture. :)
