Title: Chicken buns
Post by: katesjoy on January 21, 2010, 08:41:01 am
I made these today but need to play a little with the recipe l think.  (http://i866.photobucket.com/albums/ab229/katesjoy/P1210007.jpg?t=1264058865)(http://i866.photobucket.com/albums/ab229/katesjoy/P1210011.jpg?t=1264059271)

I cooked the chicken first, then wrapped in dough and put in the oven.  Has anyone else tried this?  Would hate to be reinventing the wheel.

I love the idea, and haven't seen anything like it on here.  What sort of dough did you use?

I thought may as well put recipe up now - but am still fine tuning it.  It is a very plain dough - the chicken is the flavour.

INGREDIENTS
DOUGH

225g bread flour
1 t dried yeast
1/2 t sugar
1/2 t of salt
150g milk
15g butter

FILLING

20ml sunflower oil
20g soy sauce
1 T honey
1 chicken breast (around 230g) prechopped or chop in TMX
3 spring onions

Place all dough ingredients into  *: 3 minutes on  ::  (l had to scrape sides part way through).  Remove dough onto mat to roll later.

In clean bowl put all filling ingredients, excluding spring onion and cook for around 5 1/2 minutes, 100 degrees, reverse speed 2.  (put spring onion in for the last minute or so)

While chicken is cooking divide dough into 8 pieces.  Roll out to 13cm rounds.  When chicken finished cooking divide amongst the 8 rounds, brush edges of rounds with egg yolk/water mix and bring the dough around to cover all of filling, place seamside down on tray layered with baking paper.

Let rise in warm place until almost double in size.  Brush buns with egg yolk/water mix and sprinkle with sesame seeds.  Put in 200 degree oven until golden brown.

Possible variation - use vegies instead of chicken in soy mix.

Any alterations/suggestions welcome.

Oh, l got the idea from bread machine book.

Wonder how they would go being steamed ?  like pork buns

hmm steamed, will try a couple next time and see how they go.

What about the result aren't you quite happy about?  I think the dough just needs a bit of fine tuning.  Of course by my third bun l was thinking they were just fine as they are!  :D  The dough just took a little longer than l am used to come together - by the time l had rolled out the forms it was fine though.  I may just be being picky.

Kate, I made something very similar today but with a different recipe.  Mine were very hard and crunchy, and I'd rather they were softer.  What were your's like?

Soft buns cathy, with a slightly crisp crust.  Was just planning to make some vegie ones myself.
