Stewed Rhubarb with Apple and Strawberries

I made this exactly as per the recipe. It is really lovely. The orange juice and rind really add to the flavour. Even DD who isn't fond of rhubarb liked this. Very easy. We had it with yoghurt.

Agree, this is a lovely recipe. Pre-TM never really cooked rhubarb that much, but am led to believe from my mum when growing up that it is high in iron and fibre that when it is in season, love to make a dessert crumble or to have with yoghut at breakfast. Thankfully DD loves it, that I really don't mind if she makes it out of season, as on a per kg basis it is cheaper and better for you than buying lollies.

My mother used to put mashed rhubarb in to remove some of the "tannic" taste from the oxalic acid. Kids prefer it that way.

Another friend called over this morning with even more rhubarb. I didn't have the heart to tell him we already had eaten about half a tonne. So I plan to make ILB's rhubarb cake this afternoon and will return some to him in a cake.

Toooooo True - found 2 recipes in TMX books after i had "converted" them and posted them..
As I say - it would be good to have a database so we could say - Oh yes there's a recipe for that here... or we'd batter make it up.

Lucky you. I have to buy mine from my local farmers market. We had stewed apple and rhubarb with custard for dessert tonight. So yummy!!! :)

this is really cheeky but would it be possible for someone to post this recipe? in the uk we don't get the everyday cookbook with our TMX and I love the sound of the combination!

I made this last night but without the strawberries and I used the whole orange -- too lazy to zest ;D. I made it into a crumble by sprinkling Rara's crumble topping over the top -- was so delicious all by itself without added calories of ice cream, cream, custard, etc!
Healthy tip: I halved the sugar content in both recipes, used wholemeal flour and reduced the butter content in the crumble by 30gm.

Have to agree this is really tasty - often features at our breakfast table. Made Rara's pancakes yesterday and used this as topping with yoghurt but added mample syriup to the cooking instead of sugar - forgot pic though! :) :)

I have finally made this (thank you so much to Judy for the recipe) and it's lovely. Plan is to have it for breakfast with some lovely yogurt

I made this for the first time today (after I've had my TM and EDC for over a year!). Well, sort of, I didn't have any strawberries so I used raspberries, and I didn't have any oranges so I used a pinch of cinnamon and a scraped vanilla bean. Delicious!!

I had a few tired strawberries this morning and put them into my stewed rhubarb and apple.

You only need a few, don't you cookie, as the orange is such a powerful secret addition.

I was given a bunch of home grown rhubarb today and having the other fruit needed I made this recipe for the first time. It was nicer than it looks, I think the other fruits made it special.
