Title: Asian Dipping Sauce for Vietmanese spring rolls.

This recipe is from the ever reliable ,David Herbert,' More Perfect Recipes'.  P. 60.   Adapted for TMX.

Drop 1 small red chilli on to moving blades, speed 5,  scrape down.
Add 2 teaspoons of brown sugar,  2 Tablespoons of fresh lime juice, and 2 teaspoons of Thai fish sauce.
Mix on speed 4 for 3 seconds.

This amount is for 12 spring rolls. Adjust to taste.

Good one Chookie.  You could also use good Vietnamese fish sauce  ;)  and palm sugar would be good too.  I love this combo.  Sometimes I add a garlic clove and sometimes use rice vinegar instead of the lime juice.  But this sounds great.  :-* :-* :-*

I can taste it and now want some rice paper rolls and sugar cane prawns

Looking for a dipping sauce, I came across this one - not reviewed before so also fits the bill for the current challenge  ;)

I had coriander on hand so added a tablespoon to the mixture.  The healthy baked spring rolls needed the hit of salt this dipping sauce gave them  ;)  Thanks Chookie.
